Apricot Cranberry Fig Pepitas Danish





1 Corinthians 10:13   No temptation has overtaken you that is not common to man. God is faithful, and he will not let you be tempted beyond your ability, but with the temptation he will also provide the way of escape, that you may be able to endure it.


Ingredients:
Pastry
1 stick butter (4 oz.)
1 cup honey (or 1/2 cup truvia)
1 tbsp vanilla
2 eggs
1 cup oat flour (oats powdered in the blender)
1/3 cup ground flax seed
1 cup whole wheat flour
1 tbsp baking powder
1 tsp salt
Filling
1/4 cup chopped pepitas
1/4 cup chopped dried apricots
1/4 cup dried cranberries
1/4 cup honey
1/4 cup chopped figs

Directions:
1. mix and knead pastry ingredients
2. mix filling ingredients in another bowl
3. roll out 1/2 the dough into a large rectangle
4. spread out 1/2 of the filling in the center third of the rectangle
5. cut 1/2 inch slits horizontally in the outer 2 thirds
6. fold slits inward towards center over the filling
7. repeat with other half of dough and filling
8. bake on olive oil sprayed foil lined pan for 20-30 minutes at 350 degrees F
