Petite Nectarine Cheesecakes

Ingredients:
Crust
1/3 cup cream
1/2 tsp salt
1/2 cup oat flour (oats powdered in the blender)
1/4 cup walnut flour (walnuts powdered in the blender)
Cream cheese filling
8 oz. Neufchatel cheese softened (1 package)
1 tsp vanilla
1/2 cup sweetener (evaporated cane juice, honey, maple syrup, truvia, etc.)
1 egg
3 nectarines sliced



Directions:
1. combine crust ingredients and divide among 12 olive oil-sprayed muffin cup liners (regular size)


2. blend together cream cheese filling ingredients and divide among the 12 cups using a small spoon to put the mixture on top of the crust
3. top with nectarine slices


4. bake for ~30-40 minutes at 350 degrees F
