Purple Sweet Potato Fruit Brown Rice Pancake Dessert





17 “Be on your guard against men; they will hand you over to the local councils and flog you in their synagogues. 18 On my account you will be brought before governors and kings as witnesses to them and to the Gentiles. 19 But when they arrest you, do not worry about what to say or how to say it. Ingredients:


Pancakes
1 egg
2 tbsp olive oil
1/2 cup honey
1/2 cup milk
1 tsp vanilla
1/4 tsp salt
1 tsp baking soda
1 cup brown rice flour (raw brown rice powdered in the blender)
1/2 cup whole wheat flour

Purple Sweet Potato Layer
flesh from 1 large purple sweet potato mashed
2 oz. butter (1/2 stick)
1/4 cup honey

Fruit Layer
1 cup pineapple diced
1 cup strawberries diced
1/4 cup maple syrup

Crushed Raw Nuts for Garnish


Directions:
Pancakes
1. mix egg, olive oil, honey, milk and vanilla
2. stir in salt, baking soda, and flours


3. pour tablespoon aliquots of batter onto olive oil-sprayed pan heated to medium heat


4. wait for bubbles to form and flip (~60 sec)
5. wait for about 30 sec


6. cut pancakes into strips



Purple Potato Layer
mix purple potato, honey, and butter

Fruit Layer
bring fruit to a boil and continue cooking stirring continually until fruit is thick like jam



7. layer strips of pancake, purple sweet potato layer, and jam


Top with nuts
