Cranberry Walnut Rye Bread


Ingredients:
1 cup water
6 part-skim mozzarella sticks
3/4 cup honey, molasses, maple syrup, or evaporated cane juice
1 tsp vanilla extract
1 tsp cardamom powder (crushed seeds)
1 tsp cinnamon powder
1/4 cup chopped walnuts
1/4 cup dried cranberries
1/4 cup whole raw rye kernels
1.5 cups of whole wheat flour
1 tbsp yeast

Directions:
1. add water and cheese to blender and puree
2. in a bowl, combine the cheese mixture with all ingredients except the flour
3. add the flour and knead by hand for a few minutes or in the bread machine on the dough setting
4. let rise for 1 hour
5. form into small loaves (or whatever size and shape you prefer)
6. bake for ~30-45 minutes (until crust is golden brown) at 350 degrees F
