Ingredients:
Crust
1 stick butter (4 oz.)
1 tbsp vanilla
1 tbsp stevia extract (I used Trader Joe's)
1 cup oat flour (oats powdered in the blender)
1 cup walnut flour (walnuts powdered in the blender)
1 tsp baking powder
1 tsp salt
Pie Filling
2 cups rhubarb chopped and cooked thoroughly on the stove (it should look like red apple sauce)
1 cup sliced strawberries
1 cup diced nectarines
2 egg yolks
1/2 cup maple syrup
2 tbsp whole wheat flour
1/4 tsp salt
Directions:
1. mix crust ingredients and press down onto surface of your pie pan to desired thickness
2. bake crust for 10-15 minutes at 350 degrees F
3. mix filling ingredients thoroughly and pour onto crust
4. bake for ~45 minutes (you can eat them now but the filling may not hold a shape)
5. leave to cool and cut into bars
