Fresh Basil Vegetable Mozzarella Salad




6 Seek the LORD while he may be found;
   call on him while he is near.
7 Let the wicked forsake his way
   and the evil man his thoughts.

   so are my ways higher than your ways
   and my thoughts than your thoughts.
10 As the rain and the snow
   come down from heaven,
and do not return to it
   without watering the earth
and making it bud and flourish,
   so that it yields seed for the sower and bread for the eater,
11 so is my word that goes out from my mouth:
   It will not return to me empty,
but will accomplish what I desire
   and achieve the purpose for which I sent it. 
Isaiah 55

Ingredients:
2 tbsp olive oil
1 lb fresh green beans chopped (yellow and/or green)
1 large red bell pepper diced




2 zucchinis (yellow and/or green)




handful of basil leaves
2 cups cooked garbanzo beans (16 oz can)
2 tsp salt
juice from 1/2 lemon or lime
8 oz fresh mozzarella cheese






Directions:
1. stir fry the green beans, peppers, zucchinis, basil leaves, and salt in the olive oil fro ~ 5 minutes under medium high heat




2. cover lid and continue cooking for ~3 minutes
3. stir in lemon juice and garbanzo beans




4. pour into serving dish
5. arrange mozzarella and more basil leaves on top
