Red Pepper Onion Jalapeno Omelet with Cheese

Ingredients:
6 eggs
2 tsp salt
1 tsp pepper
1/2 jalapono pepper
1/3 red onion diced
1/2 large red pepper diced


8 tbsp butter
1/2 cup shredded mozzarella cheese

Directions:
1. mix eggs, salt, pepper, jalapeno, onion, and red peppers in a bowl thoroughly with a fork


2. melt buter in a pan under medium heat and tilt pan to spread evenly


3. using a large spoon put ~1/3 cup of egg mixture (or 1/8 of total mixture) in the pan; tilt pan all around so that raw egg in the middle moves to the edges




4. after ~30-45 secs sprinkle cheese on top and fold over in half (or thirds)
