Scalloped Red Potatoes

Ingredients:
5 large red potatoes sliced thinly


1/2 large leek sliced thinly


2 oz. butter (1/2 stick)
2 tsp salt
1/2 cup cream
1/2 cup milk
1.5 cups shredded mozzarella cheese

Directions:
1. fry the leek in the butter under medium heat for ~ 5 minutes
2. add the cream, milk, and salt and bring to a boil; set aside


3. layer potatoes, cheese, and cream mixture (~ 3 repeats of each) in deep baking pan


5. cover pan with foil and bake for ~1 hr at 350 degrees F (for some reason it took ~2 hrs for this to bake in our oven; so check after 1 hr and every 15 minutes afterwards until the potatoes are baked thoroughly)
