Chocolate Peanut Cookie Sandwiches

Ingredients:
Cookie Dough
2 oz butter (1/2 stick)
1 egg
2 tsp vanilla
1/2 tsp salt
3/4 cup maple syrup
2 tsp baking soda
~1.5 cups whole wheat flour
Peanut Filling
1/4 cup natural peanut butter
1/4 cup evaporated cane juice
Chocolate Covering
3 oz unsweetened chocolate (melted in the microwave)


1/4 cup maple syrup
1/4 cup milk

Directions:
1. mix the wet cookie ingredients first; stir in the dry


2. roll into small balls and arrange on foil-lined tray


3. bake cookies for ~15 minutes at 350 degrees F


4. mix the peanut filling ingredients


5. mix the chocolate covering ingredients (heating for 30 secs more if necessary) until smooth


6. cut each cookie in half (like a bun) and fill with the peanut filling


7. dip in chocolate covering and place on parchment/wax paper until cool
