Donut Peach Oat Scones

¹ A shoot will come up from the stump of Jesse;

   the Spirit of the knowledge and fear of the LORD—

Ingredients:
3 tablespoons butter
1 egg
1 tsp vanilla
1/2 cup maple syrup
1/4 tsp salt
2 tsp baking soda
1 cup oat flour (oats powdered in the blender)
1/2 cup whole wheat flour
5 donut peaces with center core cut out
a handful of cashewnuts


Directions:
1. mix the egg, maple syrup, butter, and vanilla
2. stir in the salt, baking soda, oat flour, and wheat flour

3. put about 1/3 cup of mixture onto olive oil-sprayed foil lined tray
4. place the donut peach into the center of each dough portion and press down
5. fill the core of the donut peach for 2 cashews to form a circle
6. bake for ~30 minutes at 350 degrees F
