Ingredients:
1 tsp olive oil
1 tsp peanut oil
2 tsp salt
1 baby onion diced
1 large eggplant diced
1/2 lb brussel spouts
1 head cabbage chopped
2 cups yellow pole beans chopped
1/4 cup chopped fresh basil
1/4 cup chopped fresh dill
2 jalapenos minced
1 cup water
1 cup crushed tomatoes
Directions:
1. fry the onions, eggplant, and salt in the oil for ~ 5 minutes on medium high heat
2. add the rest of the ingredients and bring to a boil
3. reduce heat to medium low and simmer for ~20 minutes or until vegetables are tender
Goes well with Artisan Breadsticks and Sardines
