Mint Chocolate Cheesecake Bars





1 Therefore, I urge you, brothers, in view of God’s mercy, to offer your bodies as living sacrifices, holy and pleasing to God—this is your spiritual act of worship. 2 Do not conform any longer to the pattern of this world, but be transformed by the renewing of your mind. Ingredients:
Chocolate Bar
2 eggs
1/2 cup maple syrup
2 oz unsweetened chocolate (melted in microwave)
1/2 tsp baking powder
1 cup whole wheat bread crumbs (put chopped old bread in the blender; I used Cranberry Walnut Rye Bread)
Mint Cheese Top
4 oz Neufchatel cheese (1/2 package)
1/3 cup maple syrup
4 drops mint extract
4 drops green food coloring
1 egg

Directions:
1. mix the bar ingredients 


2. mix the mint cheese top ingredients in a separate bowl with a hand blender


3. pour the bar ingredients onto the bottom of an olive oil-sprayed foil-lined cake pan


4. cover the bar with the mint cheese top 


5. bake for ~30-35 minutes at 350 degrees F
