Asian Indian Shrimp and Vegetable Noodles





1 In the past God spoke to our forefathers through the prophets at many times and in various ways, 2 but in these last days he has spoken to us by his Son, whom he appointed heir of all things, and through whom he made the universe. 3The Son is the radiance of God’s glory and the exact representation of his being, sustaining all things by his powerful word. After he had provided purification for sins, he sat down at the right hand of the Majesty in heaven. 4 So he became as much superior to the angels as the name he has inherited is superior to theirs. Heb 1


Ingredients:


3 tbsp sesame oil
1 onion diced
2 cloves garlic minced
2 tbsp soy sauce
1/4 cup crushed peanuts
1 cup fresh broccoli
1 cup baby carrots chopped
1/2 cup diced bell peppers
2 tbsp small hot peppers sliced
3 eggs scrambled separately
1 lb raw shrimp (I used frozen de-veined and tail-off)
1 lb dry whole wheat noodles
2 quarts water
2 tsp salt

Directions:

1. boil the noodles in the water and salt until al dente (~ 8-10 minutes)
2. fry the onions and garlic in the oil for ~ 5 minutes on medium heat
3. add the soy sauce and shrimp, continue frying for ~ 3 minutes, cover lid and let simmer for ~ 10 minutes
4. add the remaining ingredients, cover lid, and keep cooking for ~ 5 minutes.
5. add the shrimp and vegetables to the noodles and mix
