Quick Cinnamon Rolls





23 Yet I am always with you; 
   You hold me by my right hand.

Ingredients:

3 tbsp butter softened
1/4 cup honey
1 cup milk
1 egg
2.5 cups whole wheat flour
2 tsp baking powder
1/2 tsp salt
1 tbsp dough enhancer 

Cinnamon Filling

2 tbsp butter softened
2 tbsp honey
2 tsp cinnamon

Directions:

1. use an egg beater to beat the butter, honey, milk and egg
2. knead in the flour, baking soda, salt, and dough enhancer
3. let the dough sit for 10 minutes
4. use a rolling pin to roll out into large rectangle(s) about 1/4 inch thick
5. spread the filling over the entire rectangle(s) (I ended up making 3 rectangles about 1 square foot each)
6. roll the rectangles like a scroll and slice into 1/2 inch thick pieces
7. place onto baking sheet and bake for ~ 25 minutes at 350 degrees F


Alternatively, you can fill with a nut-butter/honey mixture. This picture shows these rolls filled with sunflower butter (2 tbsp) + honey (1 tbsp).

Angel Cinnamon Cream Rolls





 1 In the year that King Uzziah died, I saw the Lord seated on a throne, high and exalted, and the train of his robe filled the temple. 2 Above him were seraphs, each with six wings: With two wings they covered their faces, with two they covered their feet, and with two they were flying. 3 And they were calling to one another:
   “Holy, holy, holy is the LORD Almighty;
   the whole earth is full of his glory.”
 4 At the sound of their voices the doorposts and thresholds shook and the temple was filled with smoke.
 5 “Woe to me!” I cried. “I am ruined! For I am a man of unclean lips, and I live among a people of unclean lips, and my eyes have seen the King, the LORD Almighty.”

Ingredients:

Cake
3 egg white beaten until stiff peaks form
1/3 cup whole wheat flour
1/3 cup evaporated cane juice
1/4 tsp salt
1/2 tsp baking soda
1 tsp vanilla

Cinnamon Cream
2 tbsp Neufchatel cheese softened
2 tbsp evaporated cane juice
1 tsp cinnamon

Directions:
1. combine cake ingredients and spread onto a buttter-sprayed foil-lined tray
2. bake for ~ 15 min at 350 degrees F
3. roll up like a scroll with the foil still attached and unroll
4. use a thin spatula to remove the cake from the foil and let cool
5. combine cream ingredients and spread over cake
6. roll up like a scroll and slice

Cinnamon Papaya Oat Bars





6 This is the one who came by water and blood—Jesus Christ. He did not come by water only, but by water and blood. Ingredients:


2 eggs
1 cup fresh pureed papaya 
3 tbsp butter softened
1 tsp vanilla
1 cup honey
3 cups oats
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon (and more for sprinkling)
2 tbsp sesame seeds

Directions:

1. stir together all the ingredients except the sesame seeds
2. pour batter into an olive oil-sprayed foil lined cake pan
3. sprinkle sesame seeds and more cinnamon on top


4. bake for ~ 45 mintues at 350 degrees F

Cinnamon Biscuits





 1 When all these blessings and curses I have set before you come upon you and you take them to heart wherever the LORD your God disperses you among the nations, 2 and when you and your children return to the LORD your God and obey him with all your heart and with all your soul according to everything I command you today, 3 then the LORD your God will restore your fortunes and have compassion on you and gather you again from all the nations where he scattered you. 4 Even if you have been banished to the most distant land under the heavens, from there the LORD your God will gather you and bring you back. 5 He will bring you to the land that belonged to your fathers, and you will take possession of it. Ingredients:


1 egg
1/2 cup honey
1/2 cup half and half
1/4 cup apple juice
1 tsp vanilla
2 cups whole wheat flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon

Directions:

1. mix egg, honey, half and half, apple juice, and vanilla
2. stir in the rest of the ingredients
3. drop in heaping tablespoons onto an olive oil-sprayed foil-lined tray
4. bake for ~ 30 minutes at 350 degrees F

Cinnamon Apple Walnut Oat Cream Rolls

Ingredients:

Roll
1 cup oat flour (oats powdered in the blender)
1 cup walnut flour (walnuts powdered in the blender)
1/2 cup honey
1 egg
1/2 tsp salt
1 tsp baking soda

Cream
4 oz Neufchatel cheese softened (1/2 package)
1/4 cup evaporated cane juice (or other natural sweetener)

1 extra-large apple sliced into 1/4" sliced

2 tsp cinnamon

2 tbsp crushed walnuts

Directions:
1. mix the roll ingredients and spread in a large circle on an olive oil-sprayed foil-lined tray
2. mix the cream ingredients and spread over circle
3. arrange the sliced apples over the cream
4. sprinkle with cinnamon
5. bake for ~ 30 minutes at 350 degrees F



6. roll up like a scroll (without removing the circle from the foil) and let sit until cool
7. unroll, peel the foil off, reroll, and slice
8. top with crushed walnuts

Cinnamon Flax Walnut Rye Cake-Bread





4 One thing I ask of the LORD,
   this is what I seek:
that I may dwell in the house of the LORD
   all the days of my life,
to gaze upon the beauty of the LORD
   and to seek him in his temple.

   he will keep me safe in his dwelling;
he will hide me in the shelter of his tabernacle

Ingredients:
3 eggs
1/2 cup olive oil
1 cup honey
1 tsp vanilla
1.5 cups whole wheat flour
1 tbsp cinnamon
1/3 cup flax seed flour (flaxseeds powdered in the blender)
1/3 cup walnut flour (walnuts powdered in the blender)
1/3 cup rye meal (rye kernels powdered in the blender)



Directions:
1. mix eggs, honey, oil, and vanilla
2. stir in the rest of the ingredients
3. pour onto olive oil-sprayed foil-lined cake pan
4. bake for ~ 45 minutes at 350 degrees F

Purple Sweet Potato Pinwheels





   36 “No one knows about that day or hour, not even the angels in heaven, nor the Son, but only the Father. 37 As it was in the days of Noah, so it will be at the coming of the Son of Man. 38 For in the days before the flood, people were eating and drinking, marrying and giving in marriage, up to the day Noah entered the ark; 39 and they knew nothing about what would happen until the flood came and took them all away. That is how it will be at the coming of the Son of Man.40 Two men will be in the field; one will be taken and the other left. 41 Two women will be grinding with a hand mill; one will be taken and the other left.

Ingredients:


Dough
1/2 cup honey
1 tsp vanilla
1.5 oz butter (1/3 stick)
1 tsp baking soda
1/4 tsp salt
2 cups whole wheat flour


Filling
1/2 cup mashed purple sweet potato
4 oz Neufchatel cheese softened (1/2 package)
.5 oz butter (1/6 stick)


Directions:
1. mix the honey, vanilla, and butter
2. stir in the baking soda, salt, and flour to achieve a rollable dough (add flour/milk as necessary)
3. mix the filling ingredients
4. using a rolling pin roll the dough into (a) large rectangle(s)
5. spread filling (desired amount) on the entire surface of the rectangle of dough 
6. roll up like a scroll and slice into 1/2 inch thick slices
7. spread on a foil-lined tray and bake for ~ 15 minutes at 350 degrees F






I ended up making 3 rectangles and dividing the filling into thirds (each third for 1 rectangle), but you can adjust the size of the rectangle to adjust your preferred wheel size.

Maple Cinnamon Oat Flax Nut Biscuits

Ingredients:
4 oz butter (1 stick)
1 cup maple syrup
1 tsp vanilla
1 egg
1/4 tsp salt
1 cup whole wheat flour
1/2 cup ground flaxseed
1/2 cup chopped nuts (I used almonds and walnuts)


Directions:
1. mix the butter, maple syrup, vanilla, and egg
2. stir in the salt, flour, flaxseed, and nuts
3. drop by tablespoonfuls on foil-lined tray or form into a small loaf
4 bake for ~15 minutes at 350 degrees F

Cinnamon Oat Bites or Biscotti





1 So then, men ought to regard us as servants of Christ and as those entrusted with the secret things of God. 2 Now it is required that those who have been given a trust must prove faithful. 3 I care very little if I am judged by you or by any human court; indeed, I do not even judge myself. 4 My conscience is clear, but that does not make me innocent. Ingredients:
1 egg
2 oz. butter (1/2 stick)
2 tsp vanilla
3/4 cup maple syrup
1 tsp baking soda
1/4 tsp salt
1 tbsp cinnamon
2 cups whole wheat flour
1 cup oats


Directions:
1. mix the egg, butter, maple syrup, cinnamon, and vanilla


2. stir in the rest of the ingredients


3. roll into balls, arrange on tray, and bake for 10-12 minutes at 350 degrees F


OR
3. form into loaf and bake for 15 minutes at 350 degrees F


4. cut into slices and arrange on tray


5. bake for ~15 more minutes at 350 degrees F

Cinnamon Oat Cake




10 The LORD will lay bare his holy arm
   in the sight of all the nations,

Ingredients:
2 eggs
1 oz butter (1/4 stick)
2 tsp vanilla extract
1/2 cup honey
1 cup whole wheat flour
1/4 tsp salt
2 tsp baking soda
1 cup quick oats
1/4 cup walnuts chopped
1/4 cup raisins
Glaze
1 oz butter (1/4 stick)
2 tsp cinnamon
2 tbsp honey


Directions:
1. mix the eggs, honey, butter, and vanilla
2. stir in the flour, salt, baking soda, oats, walnuts, and raisins




3. spread onto olive oil-sprayed foil-lined cake pan
4. mix the glaze ingredients and spread over cake batter












5. bake for ~30 minutes at 350 degrees F

Cinnamon Almond Pinwheel Pastries



Job 6:10
  This would be my comfort; I would even exult in pain unsparing, for I have not denied the words of the Holy One.

Ingredients:
Pastry
1 stick butter (4 oz.)
1 cup honey (or 1/2 cup truvia)
1 tbsp vanilla
2 eggs
1 cup oat flour (oats powdered in the blender)
1/3 cup ground flax seed
1 cup whole wheat flour
1 tbsp baking powder
1 tsp salt
Cinnamon Filling
1/2 cup almond flour (almonds powdered in the blender)
1/4 cup agave syrup
1 tbsp cinnamon
2 tbsp cream cheese

Directions:
1. mix and knead the pastry ingredients (add flour or milk to obtain a pliable but not too sticky dough)
2. mix filling ingredients in a separate bowl 
3. divide the dough into thirds
4. use a rolling pin to roll a piece of dough into a large rectangle
5. spread 1/3 of filling all over the rectange
6. roll up like a scroll and chop into slices
7. arrange slices on a foil lined tray sprayed with olive oil
8. bake for 15-20 minutes at 350 degrees C

Thank God for Healthy Cinnamon Rolls in a Hurry!





Cinnamon Rolls!
This recipe is for healthy cinnamon rolls and can be done very quickly.

Ingredients for the Dough:

Wet:
1 egg
1 tbsp vanilla
1/4 cup olive oil (or butter)
1/4 cup honey
1/2 cup milk

Dry:
2 cups whole wheat flour (I used Eagle Mills white whole wheat)
2 tsp baking powder
1 tsp salt

Ingredients for the Cinnamon Spread:
1/2 cup evaporated cane juice (or brown sugar)
1/4 cup butter
2 tbsp cinnamon powder

1. Preheat oven to 350 degrees Farenheight
2. Mix wet (mix first separately) and dry ingredients to form a soft rollable dough (adjust texture by adding small quantities of milk and/or flour)
3. Using a rolling pin, roll the dough out into a large rectangle (about 1.5'X1.5')
4. Mix the ingredients for the cinnamon spread
5. Spread the cinnamon spread on the rolled dough so that it completely covers the rectangle (including the edges)
6. Roll the rectangle up tightly 
7. Use your fingers to seal and compress the ends inwards
8. Use a knife to slice the roll into approximately 3/4" pieces
Slicing the Dough
9. Place slices on a baking sheet covered with olive oil spray (or any cooking spray)
Ready to Bake
10. Bake for 20 minutes 

11. Remove from oven
