Fragrant Sauteed Vegetables





11 Then I saw a great white throne and Him who was seated on it. Ingredients:


1/4 cup olive oil
2 tsp salt
2 tsp curry powder
2 cups fresh chopped green beans
2 cups chopped zucchini
2 large carrots peeled and shaved
1/4 cup cilantro leaves


Directions:


1. fry the green beans, salt, and curry powder in the oil on medium heat for ~ 3 minutes, cover lid and cook for ~ 10 minutes (open lid, stir, and close lid a few times during the 10 minutes)
2. add the remaining ingredients, cover lid, and continue cooking for ~ 3 minutes
3. garnish with cilantro

Asian Indian Shrimp and Vegetable Noodles

Ingredients:


3 tbsp sesame oil
1 onion diced
2 cloves garlic minced
2 tbsp soy sauce
1/4 cup crushed peanuts
1 cup fresh broccoli
1 cup baby carrots chopped
1/2 cup diced bell peppers
2 tbsp small hot peppers sliced
3 eggs scrambled separately
1 lb raw shrimp (I used frozen de-veined and tail-off)
1 lb dry whole wheat noodles
2 quarts water
2 tsp salt

Directions:

1. boil the noodles in the water and salt until al dente (~ 8-10 minutes)
2. fry the onions and garlic in the oil for ~ 5 minutes on medium heat
3. add the soy sauce and shrimp, continue frying for ~ 3 minutes, cover lid and let simmer for ~ 10 minutes
4. add the remaining ingredients, cover lid, and keep cooking for ~ 5 minutes.
5. add the shrimp and vegetables to the noodles and mix

Coriander Chicken, Sauteed Peppers, Carrots, Red Onions, Olives, and Basil Sandwiches




 53 Jesus said to them, “I tell you the truth, unless you eat the Flesh of the Son of Man and drink His blood, you have no life in you. 54 Whoever eats My flesh and drinks My blood has eternal Life, and I will raise him up at the last day. John 6

Ingredients:

whole wheat sandwich rolls or buns 

Coriander Chicken

1 tbsp olive oil
4 oz raw chicken cut into small pieces
1 tsp salt
1/4 tsp coriander
1/4 tsp black pepper

Sauteed Peppers, Carrots, Olives, and Red Onions

2 tbsp olive oil
1/2 red onion diced
2 tsp salt
1 large bell pepper diced
2 large carrots peeled and diced
1/4 cup sliced olives
1 tbsp crushed dried red chilli (optional; dad and mom like everything spicy)

fresh basil leaves
shredded mozzarella cheese (optional)

Directions:

1. Coriander Chicken: fry the chicken, salt, coriander, and pepper in the olive oil under medium heat for ~ 5 minutes, cover lid and continue cooking for ~ 10 minutes or until cooked thoroughly (stirring every 2 minutes)
2. Sauteed Peppers, Carrots, Olives and Red Onions: Fry the peppers, carrots, onions, olives, and salt in the olive oil for ~ 5 minutes under medium heat
3. add the cheese to one half of the bun/roll and toast the bread until the cheese melts
4. spread the chicken, vegetables, and fresh basil leaves over the cheese and top with the other half of the bun/roll

South Indian Chicken Curry

Ingredients:


1/4 cups olive oil
1 onion diced
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp salt
1 tsp turmeric
2 lb chicken quarters; skin removed (dad likes the bones left in)
2 cups fresh tomatoes diced
2 jalapeno peppers diced
1/4 cup fresh cilantro leaves
2 tbsp curry spice mix (your chosen combination of powdered cloves, cinnamon, cumin, mustard, coriander, star-anise, bay leaves, etc.)


Directions:


1. fry the onion, garlic, ginger, salt, and turmeric under on medium heat for ~ 7 minutes
2. add the chicken and continue frying while stirring for ~ 5 minutes
3. add the rest of the ingredients and bring to a boil
4. cover lid and let simmer for ~ 1 hr

Spicy Cauliflower, Spinach, Carrots, and Tomatoes





3 Praise be to the God and Father of our Lord Jesus Christ! Ingredients:


2 tbsp olive oil
1 onion diced
2 tsp salt
1 head cauliflower diced
2 large carrots peeled and diced
2 cups chopped fresh spinach
2 cups fresh pureed tomatoes
2 jalapeno peppers diced

Directions:

1. fry the onions and salt in the oil on medium heat for ~ 5 minutes
2. add the rest of the ingredients and bring to a boil
3. cover lid and let simmer for ~ 12 minutes

Creamy Spinach and Potatoes Curry

Ingredients:


1/4 cup olive oil
2 cloves garlic minced
1 onion diced
2 tsp salt
1 tsp turmeric 
4 cups fresh spinach
1/4 cup cilantro leaves
3 cooked potatoes diced
1 cup crushed tomatoes
1 cup yogurt
1/4 cup shredded cheese

Directions:

1. fry the garlic, onions, salt, and turmeric in the oil under medium heat for ~ 5 minutes
2. add the spinach, cilantro, and potatoes and continue frying for ~ 5 minutes
3. add the tomatoes and bring to a boil
4. add the remaining ingredients and stir until the cheese is melted and distributed
5. cover lid and let simmer for ~ 10 minutes

Spicy Kidney Bean Carrot Spinach Tomato Soup

Ingredients:

1/4 cup olive oil
1 tsp cumin seeds
3 cloves garlic minced
1 tbsp salt
1 onion diced
1 cup chopped fresh spinach
5 tomatoes diced
2 carrots peeled and diced
1/2 cup cilantro leaves
5 small red chillis minced
2 tsp soy sauce
1 tsp black pepper
1 cup water
2 cups cooked kidney beans
1 cup cooked small red beans

Directions:

1. fry the cumin, garlic, salt, and onions in the oil under medium heat for ~ 5 minutes
2. add the spinach, tomatoes, carrots, and cilantro and continue frying while stirring for ~ 5 minutes
3. add the chillis, soy sauce, black pepper, and water
4. cover lid and let simmer for ~ 15 minutes
5. add the beans and continue simmering for ~ 5 minutes

Monday

Indian Baked Potato Beef

Ingredients:

2 lb lean beef cuts diced
4 cooked and peeled medium potatoes cut into large pieces
2 tomatoes diced
3 cloves garlic micned
1 tbsp minced ginger
1 onion sliced
1/4 cup olive oil
1 cup yogurt
1 tbsp salt
1 tbsp meat masala (optional; found in indian store)
1 tsp turmeric
1/4 cup cilantro leaves

Directions:

1. mix all ingredients in a large bowl
2. spread onto a large baking tray


3. bake uncovered for ~ 1 hour at 350 degrees F

Okra and Tomatoes Stir-fry




1 “All this I have told you so that you will not go astray. 2 They will put you out of the synagogue; in fact, a time is coming when anyone who kills you will think he is offering a service to God. 3 They will do such things because they have not known the Father or me. 4 I have told you this, so that when the time comes you will remember that I warned you. I did not tell you this at first because I was with you.

Ingredients:

1/4 cup olive oil
1 onion diced
2 tsp salt
1 tsp turmeric
3 cups sliced okra
1/2 cup crushed tomatoes
1/4 cup cilantro leaves

Directions:

1. fry the onions, salt, and turmeric in the olive oil on medium heat for ~ 5 minutes
2. add the okra and continue frying while stirring for ~ 5 minutes
3. add the tomatoes and cilantro and cover lid
4. let simmer for 15 minutes or until tomato juice is evaporated

Cauliflower Carrot Curry

Ingredients:

2 tbsp olive oil
1 tsbp minced garlic
1 tbsp minced ginger
2 tsp salt
1 tsp turmeric
1 tbsp minced chillis
1 head cauliflower diced
2 large carrots peeled and diced
1 cup crushed tomatoes
1/4 cup cilantro leaves

Directions:

1. fry the garlic, ginger, salt, and turmeric in the oil on medium heat for ~ 5 minutes
2. add the cauliflower, chillis, and carrots and continue cooking while stirring for ~ 5 minutes
3. add the remaining ingredients, cover lid, and let simmer for ~ 10 minutes

Dad's Indian Chicken (for Anand and Prassu)


25 At that [cj]time Jesus said, “I praise You, Father, Lord of heaven and earth, that You have hidden these things from the wise and intelligent and have revealed them to infants. 26 Yes, Father, for this way was well-pleasing in Your sight. 27 All things have been handed over to Me by My Father; and no one knows the Son except the Father; nor does anyone know the Father except the Son, and anyone to whom the Son wills to reveal Him. Ingredients:

1/3 cup olive oil
2 red onions diced
7 cloves garlic minced
1 inch ginger root crushed
(or instead of above ingredients use 1/4 cup ginger-garlic paste that Anand has)
2 lbs fryer chicked cut into pieces
2 tsp salt
1 tsp turmeric
2 tsp chili powder
1 tbsp crushed red chili pepper
1/4 cup chopped cilantro
3 roma tomatoes diced

Directions:

1. on medium-high heat fry the onions in the oil until the onions are starting to get burned
2. add the ginger and garlic and fry until these two are almost burned as well
3. add the chicken, salt, and turmeric and fry until the outside of the chicken is almost burned
4. add the remaining ingredients, bring to a boil, cover lid


5. cook on medium heat for ~ 15 minutes

Fragrant Chicken and Brown Rice Quinoa Potluck Dish

Ingredients:

Chicken

1/4 cup olive oil
4 cloves garlic minced
1 large onion diced
2 lb raw fresh chicken
1 tbsp salt
2 tsp curry powder
1 tsp white pepper
juice from 1/2 lime
2 zucchini diced
1 carrot peeled and diced
1 bell pepper diced

Rice and Quinoa

2 cups dry brown rice
1/2 cup dry quinoa
2 tsp salt
4 tbsp butter (1/2 stick)
7 cups water

cilantro and dried cranberries for garnish 

Directions:

1. fry the onions, garlic, salt, curry powder, and white pepper in the olive oil fo r~ 5 minutes under medium-high heat
2. add the chicken and continue frying while stirring for ~ 5 minutes
3. cover lid and reduce heat to medium; simmer for ~ 15 minutes
4. all the zucchini, carrots, and peppers
5. meanwhile bring the rice/quinoa ingredients to a boil in another pot, reduce heat to low and let simmer for ~ 1 hr
6. in a casserole dish pour the rice onto one side on the dish
7. pour the chicken mixture onto the other side of the dish
8. bake for ~ 20 minutes before serving 

garnish with cilantro and dried cranberries

Ingredients:


2 tbsp sesame oil
1 onion diced
3 cloves garlic minced
2 tsp salt


1 lb fresh tilapia

Directions:

1. fry the onions, garlic, and salt in the oil for ~ 5 minutes under medium-high heat
2. add the tilapia, cover lid, reduce heat to medium and cook for ~ 10 minutes or until the bottom of the fish is starting to sear

Chilli Pepper Garlic Biscuit Slices






 1 Now we know that if the earthly tent we live in is destroyed, we have a building from God, an eternal house in heaven, not built by human hands. 2 Meanwhile we groan, longing to be clothed with our heavenly dwelling, 3 because when we are clothed, we will not be found naked. 4 For while we are in this tent, we groan and are burdened, because we do not wish to be unclothed but to be clothed with our heavenly dwelling, so that what is mortal may be swallowed up by life. 5 Now it is God who has made us for this very purpose and has given us the Spirit as a deposit, guaranteeing what is to come.

Ingredients:

2 eggs
1/3 cup olive oil
1/3 cup milk
1/4 cup flax seeds
2 tsp baking soda
1 tsp salt
2 cloves garlic minced
1 jalapeno pepper minced
3 red chilli peppers minced
2 cups whole wheat flour

Directions:

1. mix the eggs, oil, and milk
2. stir in the rest of the ingredients
3. pour onto an olive oil-sprayed foil-lined tray
4. bake for ~ 35 minutes at 350 degrees F

Rosemary Beef, Zucchini, and Carrots




1 Are we beginning to commend ourselves again? Or do we need, like some people, letters of recommendation to you or from you? 2 You yourselves are our letter, written on our hearts, known and read by everybody. 3 You show that you are a letter from Christ, the result of our ministry, written not with ink but with the Spirit of the living God, not on tablets of stone but on tablets of human hearts.

Ingredients:

2 tbsp olive oil
1 onion diced
3 cloves garlic minced
2 tsp salt
1 tsp black pepper
1 lb raw beef (sirloin tip steak) cut into small pieces
1 medium zucchini cut into pieces
3 carrots peeled and diced
2 medium green tomatoes diced
1 tbsp chopped fresh rosemary



Directions:

1. fry the onion, garlic, salt, and pepper in the oil for ~ 5 minutes under medium-high heat
2. add the beef and continue cooking until beef is brown


3. add the rest of the ingredients, cover lid, and continue cooking for ~ 10 minutes under medium-high heat

Baby Red Potato and Minced Meat Stir-Fry




15 See, I set before you today life and prosperity, death and destruction. 16 For I command you today to love the LORD your God, to walk in his ways, and to keep his commands, decrees and laws; then you will live and increase, and the LORD your God will bless you in the land you are entering to possess.

Ingredients:

2 lb minced raw meat (I used ground turkey)
1/2 bell pepper diced
1 onion diced
3 cloves garlic minced
1 tbsp salt
1 tsp white pepper
2 jalapeno peppers minced
2 cups cubes cooked baby red potatoes 

Directions:

1. fry the meat, peppers (both types), onion, garlic cloves, salt, and white pepper under medium-high heat until the meat is cooked (~ 10 minutes)
2. add the potatoes, stir, and cover lid for ~ 5 minutes


Cauliflower Potato Stir-Fry "Aloo Gobi"





 1 “Listen to me, you who pursue righteousness

10 baby carrots diced
1 head cauliflower diced


2 cups diced cooked potatoes
1/4 cup chopped cilantro

1. fry the onion, garlic, salt, ginger, and turmeric in the oil under medium high heat for ~ 5 minutes


2. add the rest of the ingredients and continue frying for ~ 3 minutes
3. cover lid, reduced heat to medium low and leave for 10 minutes
4 sprinkle with cilantro

Spicy Tamarind Catfish Curry

1 “But now listen, O Jacob, my servant,

Ingredients:
2 tbsp olive oil
1 onion diced
1 tbsp minced garlic
1 tbsp minced ginger
2 tsp turmeric
1 tbsp salt
12 oz catfish cut into pieces (raw or thawed)


1 tbsp tamarind paste
1/2 cup water
1/4 cup chopped cilantro
1 tomato diced
2 banana peppers diced
2 jalapeno peppers diced

Directions:
1. fry the onion, garlic, ginger, turmeric, and salt in the oil until the onions are translucent (~ 5 minutes)



2. add the rest of the ingredients and bring to a boil while stirring


3. cover lid and let simmer for ~15 minutes under medium heat

Chilli Eggplant Garlic Rolls





 8 Let no debt remain outstanding, except the continuing debt to love one another, for he who loves his fellowman has fulfilled the law. 9 The commandments, “Do not commit adultery,” “Do not murder,” “Do not steal,” “Do not covet,” and whatever other commandment there may be, are summed up in this one rule: “Love your neighbor as yourself.” 10 Love does no harm to its neighbor. Therefore love is the fulfillment of the law.

The hour has come for you to wake up from your slumber, because our salvation is nearer now than when we first believed. 12 The night is nearly over; the day is almost here. Ingredients:
3/4 cup milk
2 tbsp honey
1/4 cup olive oil
1 tbsp yeast
2 tsp salt
~3 cups whole wheat flour (add more if necessary to achieve a soft rollable dough)
1/4 cup Trader Joe's Red Pepper Spread with Eggplant and Garlic (or any other spread, savory or sweet)




Directions:
1. mix the milk, honey, oil, yeast, and salt
2. knead in the flour and continue kneading for ~10 minutes
3. let dough rest for 1 hr
4. roll dough out into a large rectangle and spread the Pepper spread over the entire surface 
5. roll up like a scroll




6. bake for ~ 45 minutes at 350 degrees F

Peppers and Olive Foccaccia





 30 “If his sons forsake my law
   and do not follow my statutes,
31 if they violate my decrees
   and fail to keep my commands,

Ingredients:
3 tbsp honey
2 eggs
1/3 cup olive oil
1/3 cup milk
2 tsp salt
2 tsp yeast
~2.5 cups whole wheat flour (add more if necessary to achieve a very soft dough)
1 red bell pepper diced
1 small green chili minced




1/3 cup olives sliced 






Directions:
1. stir the honey, eggs, oil, milk, salt, and yeast
2. knead in the flour 
3. knead in the peppers, chili, and olives
4. spread onto a large pizza pan




5. leave for 30 minutes at room temp
6. bake for ~30 minutes at 350 degrees F
