Egg Bake with Cream Cheese, Bell Peppers, and Spinach (for Bible study)


Lordbe gracious to us; we have waited for You.
Be their strength every morning,
Our salvation also in the time of distress. Is 33:2


Ingredients:

7 eggs
8 oz cream cheese softened
1 tsp salt

3 cloves garlic minced
1 cup chopped raw spinach
1/2 cup diced bell peppers

1 tbsp olive oil
1/4 cup shredded mozzarella cheese

Directions:

1. preheat oven to 350 degrees F
2. beat together the eggs, cream cheese, and salt
3. stir in the garlic, spinach, and peppers
4. coat a shallow cake pan with the olive oil
5. pour the egg mixture into the pan
6. sprinkle with cheese
7. bake for ~ 30 minutes

Thursday

Chicken, Brown Rice, and Garbanzo Bean Soup



There will be silence before You, and praise in Zion, O God,
And to You the vow will be performed.
O You who hear prayer,
To You all men come.

How blessed is the one whom You choose and bring nearto You
To dwell in Your courts.

Ingredients:

2 tbsp butter
1 cup chopped cherry tomatoes
1/4 cup fresh chopped basil (or other herbs of your choice)
1 tsp salt (add additional tsp if garbanzo beans are unsalted)
1 tsp garlic powder
2 cups diced cooked chicken
2 cups garbanzo beans cooked and pureed in 1 cup water (use a blender)
1 cup cooked brown rice

Directions:

1. add the butter, tomatoes, basil, salt, and garlic powder to a large cooking pot and fry on medium heat for ~ 3 minutes
2. add the chicken and continue frying for ~ 3 minutes
3. add the pureed beans and rice, bring to a boil, cover lid, and let simmer on low heat for ~ 15 minutes




Summer Chicken and Vegetable Pasta




Then you will say on that day,
“ I will give thanks to You, O Lord;

I will trust and not be afraid;
For the Lord God is my strength and song,
And He has become my salvation.”

Ingredients:

4 cups cooked whole wheat spiral noodles

2 tbsp olive oil
1 lb raw chicken
2 tsp salt
1 tsp garlic powder

1 tbsp olive oil
2 bell peppers cored and diced
1 large zucchini diced
2 tsp salt

2 cups chopped tomatoes
1/2 cup chopped fresh basil
1/2 cup champagne grapes
1 cup shredded mozzarella cheese

Directions:

1. fry the chicken, salt, and garlic powder in the oil on medium heat until cooked thoroughly (~15 minutes)
2. fry the pepper, zucchini, and salt in the olive oil on medium heat for ~ 5 minutes
3. combine all ingredients

Sunday

Selah Lasagna (for Dan and Rachel's Wedding)



14 For this reason I bow my knees before the Father, 15 from whom every family in heaven and on earth derives its name,16 that He would grant you, according to the riches of His glory, to be strengthened with power through His Spirit in the inner man, 17 so that Christ may dwell in your hearts through faith;and that you, being rooted and grounded in love, 18 may be able to comprehend with all the saints what is the breadth and length and height and depth, 19 and to know the love of Christ which surpasses knowledge, that you may be filled up to all the fullness of God. Eph 3


Ingredients:

10 oz dry lasagna noodles boiled and drained al dente (~ 24 noodles)
1 lb ground meat browned with 2 tsp salt
4 cups Italian seasoned tomato sauce
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
2 cups cottage cheese
2 tbsp olive oil
1/4 cup dried parmesan cheese

Directions:

1. lay lasagna noodles flat onto the surface of a large metal baking tray (6 noodles)
2. mix the meat and tomato sauce and spread 1/3 of mixture over the noodles
3. sprinkle 2/3 cup of each cheese in three separate layers over the meat/tomato sauce
4. top with another layer of noodles
5. repeat for two more layers
6. brush top layer of noodles with olive oil and sprinkle with parmesan cheese
7. cover with tin foil 
8. bake at 350 degrees F for ~ 80 minutes





Monday

Brown Rice Noodles and Chicken Alfredo (with Selah's Touch)

Ingredients:

3 cups freshly cooked brown rice noodles 
3 cups milk
1/3 cup whole wheat flour
2 tsp garlic powder
2 tsp salt
1 tsp dried dill
1 tsp dried Italian herbs
1/2 cup shredded mozzarella cheese
1 cup cooked and sliced chicken breast

Directions:

1. in a cup mix together .5 cups of milk and the flour until there are no flour lumps
2. add the flour/milk mixture in the cup to the other 2.5 cups of milk in a pan and bring to a boil on medium heat while stirring
4. continue cooking and stirring  on medium-low heat until the sauce is thickened to your liking (~ 7 minutes)
5. stir in the salt, garlic powder, cheese, and herbs
6. add and combine the chicken and noodles

with Selah, Ben, Edwin, Jaden, and Adam today

Friday

Italian Noodles with Sardines and Kidney Beans




We have thought on Your lovingkindness, O God,
In the midst of Your temple.

Ingredients:

2 cups cooked whole wheat noodles
2 cups milk
1 tsp salt
1 cup shredded mozzarella cheese
1 cup stewed tomatoes
12 oz cooked sardines
1/2 cup fresh basil leaves
3 cloves minced garlic
1 cup cooked kidney beans

Directions:

1. bring the noodles,milk, and salt to a boil in a medium-sized pot on medium-high heat
2. add the remaining ingredients and simmer on low heat for ~ 10 minutes covered; stir occasionally

Saturday

Pea Pods, Tomatoes, Zucchini, Yellow Peppers and Basil Stir-fry




But You, O Lord, are a shield about me,
My glory, and the One who lifts my head.

Ingredients:

2 tbsp olive oil
2 tsp salt
1 cup chopped fresh pea pods
1 yellow bell pepper cored and diced
1 medium zucchini diced
2 roma tomatoes diced
1 handful fresh basil leaves

Directions:

1. heat the oil in medium heat
2. add the salt, pods, peppers, zucchini, and tomatoes
3. fry on medium heat for ~ 5 minutes while stirring
4. add the basil, cover lid, and let sit for 2 minutes on medium heat

Friday

Ciambotta (Italian Stew)





11 With this in mind, we constantly pray for you, that our God may count you worthy of his calling, and that by his power he may fulfill every good purpose of yours and every act prompted by your faith. 12 We pray this so that the name of our Lord Jesus may be glorified in you, and you in him, according to the grace of our God and the Lord Jesus Christ. 2 Thess 1


Ingredients:

1/4 cup olive oil 
3 cloves garlic minced
2 tsp salt
2 cups quartered brussel sprouts
2 cups halved cherry/grape tomatoes
2 cups fresh spinach leaves
1/2 cup diced bell pepper
1 cup slivered baby carrots
1/2 cup fresh basil leaves
2 cups cooked garbanzo beans

Directions:

1. heat the oil in a pan on medium heat
2. add garlic and salt to pan and fry for ~ 3 minutes
3. add the brussel sprouts and continue frying for ~ 3 minutes
4. add the tomatoes and continue frying for ~ 3 minutes
5. add the spinach leaves and cover lid; leave for 3 minutes
6. open lid and stir
7. add the peppers, carrots, and basil and continue cooking covered for ~ 5 minutes
8. optionally stir in garbanzo beans

Serve over whole wheat noodles or brown rice with shaved cheese and/or grilled chicken pieces as a topping

Saturday

Coriander Chicken, Sauteed Peppers, Carrots, Red Onions, Olives, and Basil Sandwiches




 53 Jesus said to them, “I tell you the truth, unless you eat the Flesh of the Son of Man and drink His blood, you have no life in you. 54 Whoever eats My flesh and drinks My blood has eternal Life, and I will raise him up at the last day. John 6

Ingredients:

whole wheat sandwich rolls or buns 

Coriander Chicken

1 tbsp olive oil
4 oz raw chicken cut into small pieces
1 tsp salt
1/4 tsp coriander
1/4 tsp black pepper

Sauteed Peppers, Carrots, Olives, and Red Onions

2 tbsp olive oil
1/2 red onion diced
2 tsp salt
1 large bell pepper diced
2 large carrots peeled and diced
1/4 cup sliced olives
1 tbsp crushed dried red chilli (optional; dad and mom like everything spicy)

fresh basil leaves
shredded mozzarella cheese (optional)

Directions:

1. Coriander Chicken: fry the chicken, salt, coriander, and pepper in the olive oil under medium heat for ~ 5 minutes, cover lid and continue cooking for ~ 10 minutes or until cooked thoroughly (stirring every 2 minutes)
2. Sauteed Peppers, Carrots, Olives and Red Onions: Fry the peppers, carrots, onions, olives, and salt in the olive oil for ~ 5 minutes under medium heat
3. add the cheese to one half of the bun/roll and toast the bread until the cheese melts
4. spread the chicken, vegetables, and fresh basil leaves over the cheese and top with the other half of the bun/roll

Noodles with Italian Butter Sauce, Broccoli, and Yellow Peppers





4 As you come to him, the living Stone—rejected by humans but chosen by God and precious to him— 5 you also, like living stones, are being built into a spiritual house to be a holy priesthood, offering spiritual sacrifices acceptable to God through Jesus Christ. 6 For in Scripture it says:
   “See, I lay a stone in Zion,
   a chosen and precious cornerstone,
and the one who trusts in him
   will never be put to shame.”1 Peter 2

Ingredients:

2 tbsp butter
3 garlic cloves minced
2 tsp salt
1 tbsp dried Italian spices 
2 cups fresh broccoli chopped
1 yellow bell pepper diced
1 tomato diced
3 cups cooked whole wheat noodles

Directions:

1. fry the garlic, spices, and salt in the butter for ~ 5 minutes on medium heat
2. add the broccoli, peppers, and tomatoes and bring to a boil
3. cover lid and let simmer for ~ 5 minutes
4. add the noodles or the serve noodles with the vegetable sauce on top

Whole Grain Crackers and Almond-coated Cheese Ball

Ingredients:

Crackers
1/4 cup olive oil
3 egg yolks
1/3 cup water
1/2 tsp salt
1 tsp baking soda
~2.5 cups whole wheat flour

Cheeseball
5 oz Neufchatel cheese
2 tbsp grated gouda cheese
2 tbsp grated cheddar cheese
2 tbsp grated provolone cheese
1/2 tsp salt
1/4 cup chopped almonds

Directions:

1. combine yolks, oil, water, salt, and baking soda
2. knead in the flour (add more if necessary) to achieve a soft rollable dough
3. use a rolling pin to roll pieces of dough very thin (~ 1/8")
4. use a pizza cutter to cut squares and arrange on a baking tray
5. bake for 12-15 minutes @ 350 degrees F
6. combine cheeses and salt and put onto a sheet of plastic wrap
7. use the plastic wrap to form the cheese into a ball
8. remove wrap and roll the ball in chopped almonds
9. arrange crackers and ball on a tray

Mediterranean Chicken





 8 Good and upright is the LORD; 
   therefore he instructs sinners in his ways.

Ingredients:


2 lb raw fresh boneless skinless chicken cut into pieces
2 cups pureed fresh tomatoes
5 cloves garlic minced
2 tsp pepper
1 tbsp salt
1/4 cup olive oil
1/4 cup fresh basil leaves
2 zucchini diced


shredded mozzarella cheese (opt)


Directions:


1. toss all ingredients in a large bowl
2. spread onto a baking pan with high edges (chicken water will come out); sprinkle with cheese
3. bake for ~ 45 minutes covered at 350 degrees F

Wednesday

Basil French Green Beans



 1 Then Solomon said, “The LORD has said that he would dwell in a dark cloud; 2 I have built a magnificent temple for you, a place for you to dwell forever.”
 3 While the whole assembly of Israel was standing there, the king turned around and blessed them. 4 Then he said:
   “Praise be to the LORD, the God of Israel, who with his hands has fulfilled what he promised with his mouth to my father David. For he said, 5 ‘Since the day I brought my people out of Egypt, I have not chosen a city in any tribe of Israel to have a temple built for my Name to be there, nor have I chosen anyone to be the leader over my people Israel.6 But now I have chosen Jerusalem for my Name to be there, and I have chosen David to rule my people Israel.’2 Chron 6

Ingredients:

1 tbsp olive oil
1 tsp salt
1 tsp white pepper
1 lb french green beans
1/4 cup fresh chopped basil
1/4 cup water

Directions:

1. fry all the ingredients (except water) for ~ 5 minutes under medium-high heat
2. add water, cover lid, and let simmer for ~ 10 minutes or until the water is evaporated


Friday

Red Potatoes with Rosemary Butter





7 Now if the ministry that brought death, which was engraved in letters on stone, came with glory, so that the Israelites could not look steadily at the face of Moses because of its glory, fading though it was, 8 will not the ministry of the Spirit be even more glorious? 2 Cor 3


Ingredients:

2 tbsp butter
1 tbsp chopped fresh rosemary
1 onion diced
2 tsp salt

10 red potatoes cooked and quartered

Directions:

1. fry the rosemary, onion, and salt in the butter for ~ 5 minutes under medium-high heat
2. add the potatoes and continue cooking while tossing for ~ 10 minutes (or until the outsides of the potatoes become coarse)

Rosemary Beef, Zucchini, and Carrots




1 Are we beginning to commend ourselves again? Or do we need, like some people, letters of recommendation to you or from you? 2 You yourselves are our letter, written on our hearts, known and read by everybody. 3 You show that you are a letter from Christ, the result of our ministry, written not with ink but with the Spirit of the living God, not on tablets of stone but on tablets of human hearts.
 4 Such confidence as this is ours through Christ before God. 5 Not that we are competent in ourselves to claim anything for ourselves, but our competence comes from God. 6 He has made us competent as ministers of a new covenant—not of the letter but of the Spirit; for the letter kills, but the Spirit gives life.2 Cor 3

Ingredients:

2 tbsp olive oil
1 onion diced
3 cloves garlic minced
2 tsp salt
1 tsp black pepper
1 lb raw beef (sirloin tip steak) cut into small pieces
1 medium zucchini cut into pieces
3 carrots peeled and diced
2 medium green tomatoes diced
1 tbsp chopped fresh rosemary



Directions:

1. fry the onion, garlic, salt, and pepper in the oil for ~ 5 minutes under medium-high heat
2. add the beef and continue cooking until beef is brown


3. add the rest of the ingredients, cover lid, and continue cooking for ~ 10 minutes under medium-high heat
