Egg Bake with Cream Cheese, Bell Peppers, and Spinach (for Bible study)


Lordbe gracious to us; we have waited for You.
Be their strength every morning,

Ingredients:

7 eggs
8 oz cream cheese softened
1 tsp salt

3 cloves garlic minced
1 cup chopped raw spinach
1/2 cup diced bell peppers

1 tbsp olive oil
1/4 cup shredded mozzarella cheese

Directions:

1. preheat oven to 350 degrees F
2. beat together the eggs, cream cheese, and salt
3. stir in the garlic, spinach, and peppers
4. coat a shallow cake pan with the olive oil
5. pour the egg mixture into the pan
6. sprinkle with cheese
7. bake for ~ 30 minutes

Rhubarb Cheesecake

Ingredients:

Crust

1/4 stick butter (2 oz.) softened
1/4 cup water
~1 cup whole wheat flour
1/2 tsp salt
1/4 cup sugar

Cheesecake

2 eggs
8 oz cream cheese softened
1 cup sugar
1 tsp vanilla

Rhubarb

2 cups fresh chopped Rhubarb 
1/2 cup sugar

Directions:

1. boil the rhubarb and sugar on medium heat for ~ 10 minutes or until cooked thoroughly
2. preheat the oven to 350 degrees F
3. use an egg beater to mix the crust ingredients and spread onto the bottom and sides of a large pie pan
4. use an egg beater to blend the cheesecake ingredients and pour over crust
5. spread the rhubarb over the cheesecake batter (some of it will sink)
6. bake uncovered for ~35 minutes

Chicken Wild Rice Garbanzo Bean Casserole




Lorddo not rebuke me in Your anger,

Ingredients:

1 cup wild rice cooked in 4 cups chicken broth
8 oz chicken cooked and cubed
1 cup cooked garbanzo beans

1/2 cup butter (1 stick)
2 large carrots peeled and diced
1 onion diced
3 cloves garlic minced
2 apples diced (I used pink lady apples)
2 tsp salt
1/4 cup fresh rosemary leaves

1/3 cup white whole wheat flour

2 cups milk

1/4 cup shredded cheese

Directions:

1. heat the butter on medium heat in a large pot
2. add carrots, onion, garlic, apples, rosemary, and salt and cook for ~ 10 minutes on medium heat while stirring
3. add flour and cook for ~ 2 minutes while stirring
4. add milk and bring to a boil while stirring
5. add the rice and chicken and bring to a boil
6. simmer on low heat for ~ 15 minutes
7. pour into large baking tray and sprinkle with cheese; cover with aluminum foil
8. bake for ~ 15 minutes at 350 degrees F (optional; if prepared ahead of time)

Cake Roll with Peanut Cream (Korean Mozart Cake)





 3 And I heard a loud voice from the throne saying, “Now the dwelling of God is with men, and He will live with them. Ingredients:


6 eggs (separated)
1/2 cup water
3/4 cup honey
1.5 cups whole wheat flour
2 tsp vanilla
1/2 tsp salt

Peanut Cream

2 tbsp butter softened
1/4 cup honey
1/4 cup peanut flour (or 3 tbsp peanut butter)

Directions: preheat oven to 325 degrees F

1. beat the egg yolks, water, and honey on medium speed for 5 minutes
2. beat in the flour and salt
3. beat the egg white until stiff peaks form


4. fold the egg white into the batter
5. pour onto an olive oil-sprayed foil lined tray
6. bake for 25 minutes at 325 degrees F

Meanwhile, I was giving the blessed and brilliant Selah a science lesson (and my first middle school science tutoring experience)



mom already ate a piece :)

7. roll up with foil into a scroll, let cool, unroll and peel off foil
8. beat together the peanut cream ingredients and spread over entire surface of cake


9. roll up like a scroll again

Minced Meat and Cabbage Stir-fry




 8 But about the Son he says,
   “Your throne, O God, will last for ever and ever,
   and righteousness will be the scepter of your kingdom.
9 You have loved righteousness and hated wickedness;
   therefore God, your God, has set you above your companions
   by anointing you with the oil of joy.” Heb 1

Ingredients:

1/4 cup olive oil
1 onion diced
2 lb raw lean ground beef or turkey
1 tbsp salt
1 head cabbage chopped 
1/2 cup bell pepper diced

Directions:

1. fry the onions in the oil for ~ 5 minutes on medium heat
2. add the meat and salt and continue frying while stirring until the meat is brown (~5-7 minutes)
3. cover lid and cook for ~ 10 minutes
4. add the remaining ingredients and fry while stirring for ~ 3 minutes
5. cover lid and cook for another 5 minutes

Friday

Crepe-like Chicken





43 Then the men of Israel answered the men of Judah, “We have ten shares in the king; and besides, we have a greater claim on David than you have. So why do you treat us with contempt? Were we not the first to speak of bringing back our king?”2 Sam 19


Ingredients:


4 eggs
1/2 cup cooked chicken cut into small pieces
1/2 tsp salt
milk
olive oil


Directions:


1. heat a shallow pan to medium heat
2. in a blender or food processor, puree the chicken with the eggs and salt
3. pour the chicken mixture into a bowl and add enough milk to make a pancake consistency batter
4. coat pan lightly with olive oil
5. drop batter by tspfuls onto the pan and wait until bubbles start to form (as you would when making pancakes)
6. flip once and wait ~ 30 secs.
7. repeat steps 4-6 with remaining batter

You can use these the make wraps with whole wheat tortillas, Provolone cheese, and "Crepe-like" chicken.


Mom's 50th Birthday Pistachio Strawberry Cake

Ingredients:


3 eggs
1 cup evaporated cane juice
1/2 cup butter  (1 stick) softened
2 tsp vanilla
1/2 cup milk
1/2 cup pistachio flour (pistachios powdered in the blender)
1 cup whole wheat flour
2 tsp baking powder
1/4 tsp salt


Frosting


8 oz Neufchatel cheese softened
1/4 cup evaporated cane juice
2 tbsp butter softened


1/4 cup chopped pistachios
sliced strawberries for lining the sides of the cake


Directions


1. use an egg beater to mix the eggs, evaporated cane juice, butter, milk, and vanilla
2. beat in the pistachio flour, whole wheat flour, baking powder, and salt
3. pour into a round olive oil-sprayed cake pan
4. bake for ~ 45 minutes at 350 degrees F
5. let cool and remove from pan
6. beat together the frosting ingredients and frost the top and sides of cake
7. sprinkle the chopped pistachios on top of the cake
8. line the sides of the cake with sliced strawberries



Strawberry Sweet Potato Scones

Ingredients:

1 egg
1/2 cup honey
1/3 cup olive oil
mashed flesh from 1 large cooked orange sweet potato
2 tsp vanilla
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup fresh diced strawberries

Directions:

1. beat together the egg, honey, oil, sweet potato, and vanilla
2. beat in the flour, baking powder, and salt
3. stir in the strawberries and drop by tablespoonfuls on a baking tray
4. bake for ~ 25 minutes at 350 degrees F

Ingredients:


3 eggs
1 cup honey
1/2 tsp lemon oil
1/2 cup olive oil
2 tsp vanilla
1/4 cup milk
1 cup whole wheat flour
2 tsp baking soda
1/4 tsp salt

Directions:

1. beat together the eggs, honey, oils, vanilla, and milk
2. beat in the flour, baking soda, and salt
3. pour into an olive oil-sprayed cake pan
4. bake for ~ 45-50 minutes at 350 degrees F

Rosemary Scalloped Potatoes and Turkey (for potluck)



23 I will show the holiness of my great name, which has been profaned among the nations, the name you have profaned among them. Then the nations will know that I am the LORD, declares the Sovereign LORD, when I show myself holy through you before their eyes. Ez 36

Ingredients:

7 medium potatoes sliced into 1/4" slices
3 cups cooked cubed turkey
2 oz butter cut into small pieces
1 tbsp salt
2 tsp white pepper
1 onion sliced
2 tbsp fresh rosemary leaves
1/4 cup whole wheat flour
3 cups milk

Directions:

1. stir together the first 7 ingredients
2. mix in the flour and arrange on a large baking tray
3. pour milk over the other ingredients
4. bake for ~ 2.5 hours covered at 350 degrees F (it took this long for the potatoes to cook!...but you could keep checking every 30 min)

Cranberry Walnut Bread



8 “‘But you, O mountains of Israel, will produce branches and fruit for my people Israel, for they will soon come home. 9 I am concerned for you and will look on you with favor; you will be plowed and sown, 10 and I will multiply the number of people upon you, even the whole house of Israel. The towns will be inhabited and the ruins rebuilt. 11 I will increase the number of men and animals upon you, and they will be fruitful and become numerous. 2 tsp vanilla

1/2 tsp salt

1/2 cup dried cranberries
1/2 cup chopped walnuts

Directions:

1. use an egg beater to beat together the liquid ingredients
2. beat in the flour, baking soda, salt, and cinnamon
3. stir in the cranberries and walnuts
4. pour into an olive oil-sprayed cake pan
5. bake for ~ 45 minutes @ 350 degrees F

Whole Grain Crackers and Almond-coated Cheese Ball

Ingredients:

Crackers
1/4 cup olive oil
3 egg yolks
1/3 cup water
1/2 tsp salt
1 tsp baking soda
~2.5 cups whole wheat flour

Cheeseball
5 oz Neufchatel cheese
2 tbsp grated gouda cheese
2 tbsp grated cheddar cheese
2 tbsp grated provolone cheese
1/2 tsp salt
1/4 cup chopped almonds

Directions:

1. combine yolks, oil, water, salt, and baking soda
2. knead in the flour (add more if necessary) to achieve a soft rollable dough
3. use a rolling pin to roll pieces of dough very thin (~ 1/8")
4. use a pizza cutter to cut squares and arrange on a baking tray
5. bake for 12-15 minutes @ 350 degrees F
6. combine cheeses and salt and put onto a sheet of plastic wrap
7. use the plastic wrap to form the cheese into a ball
8. remove wrap and roll the ball in chopped almonds
9. arrange crackers and ball on a tray

Angel Cinnamon Cream Rolls

Cake
3 egg white beaten until stiff peaks form
1/3 cup whole wheat flour
1/3 cup evaporated cane juice
1/4 tsp salt
1/2 tsp baking soda
1 tsp vanilla

Cinnamon Cream
2 tbsp Neufchatel cheese softened
2 tbsp evaporated cane juice
1 tsp cinnamon

Directions:
1. combine cake ingredients and spread onto a buttter-sprayed foil-lined tray
2. bake for ~ 15 min at 350 degrees F
3. roll up like a scroll with the foil still attached and unroll
4. use a thin spatula to remove the cake from the foil and let cool
5. combine cream ingredients and spread over cake
6. roll up like a scroll and slice

2 cups cooked and mashed sweet potato
2 eggs
4 oz Neufchatel cheese (1/2 package)
8 oz evaporated milk
2 tbsp butter
2 tbsp whole wheat flour
1/2 cup honey
2 tsp cinnamon
1 tsp salt
1/4 cup dried cranberries
1/4 cup sunflower seeds

Directions:

1. blend together all ingredients
2. pour into an olive oil-sprayed cake pan
3. bake for ~45 min at 350 degrees F

3 large potatoes cooked and diced
1 plantain cooked and diced
1/2 cup mozzarella cheese
1 cup milk
1 tsp salt


Directions:


1. bring the milk, salt, and cheese to a boil
2. combine with potatoes and plaintain

Cinnamon Oat and Flax seed Bars with Pear Topping

Ingredients:


Bars
1/2 cup honey
1 egg
2 oz butter (1/2 stick)
2 cups oats
1/4 cup flax seeds
1 cup whole wheat flour
1 tsp vanilla
1/2 tsp salt
2 tsp baking soda
2 tsp cinnamon


Pear Topping
3 pears cored and sliced
juice from 1/2 lemon
1/4 cup evaporated cane juice
1 egg
1 tsp cinnamon


Directions:


1. mix the bar ingredients together and spread onto an olive oil-sprayed foil-lined pan
2. toss the pear topping ingredients and arrange on top of the bar batter




3. bake for ~ 40 minutes at 350 degrees F



Potato and Cheese Souffle Soup





8 Finally, all of you, live in harmony with one another; be sympathetic, love as brothers, be compassionate and humble.9 Do not repay evil with evil or insult with insult, but with blessing, because to this you were called so that you may inherit a blessing. 10 For,

must keep his tongue from evil

Ingredients:

2 tbsp butter
1 cup diced broccoli
3 carrots peeled and diced
3 cloves garlic minced
1 tbsp salt
1 tsp curry powder
1 tsp white pepper

3/4 cup whole wheat flour
2 cups chicken broth
1 cup shredded mozzarella cheese
4 cups milk
4 cups potatoes cooked and diced
4 eggs

Directions:

1. fry the broccoli, carrot, garlic, salt, pepper, and curry powder in the butter for ~ 5 minutes under medium-high heat
2. add the flour and continue cooking while stirring for ~ 3 minutes
3. add the rest of the ingredients and bring to a boil
4. cover lid, reduce heat to low, and simmer for ~ 15 minutes
