Lime Mango Orange Jicama Salad

Ingredients:

juice from 1 lime
2 cups chopped mango
2 cups chopped jicama



3 oranges peeled and sliced

Directions:

Toss all ingredients

Plantain Potatoes





 4 Show me your ways, LORD, 
   teach me your paths. 
5 Guide me in your truth and teach me,

Ingredients:


3 large potatoes cooked and diced
1 plantain cooked and diced
1/2 cup mozzarella cheese
1 cup milk
1 tsp salt


Directions:


1. bring the milk, salt, and cheese to a boil
2. combine with potatoes and plaintain

Braised Tilapia





7 “My father David had it in his heart to build a temple for the Name of the LORD, the God of Israel. 8 But the LORD said to my father David, ‘Because it was in your heart to build a temple for my Name, you did well to have this in your heart. 9 Nevertheless, you are not the one to build the temple, but your son, who is your own flesh and blood—he is the one who will build the temple for my Name.’2 Chron 6


Ingredients:


2 tbsp sesame oil
1 onion diced
3 cloves garlic minced
2 tsp salt


1 lb fresh tilapia

Directions:

1. fry the onions, garlic, and salt in the oil for ~ 5 minutes under medium-high heat
2. add the tilapia, cover lid, reduce heat to medium and cook for ~ 10 minutes or until the bottom of the fish is starting to sear

Nectarine Strawberry Kiwi Cheesecake





10 As the rain and the snow
   come down from heaven,
and do not return to it
   without watering the earth
and making it bud and flourish,
   so that it yields seed for the sower and bread for the eater,
11 so is my word that goes out from my mouth:
   It will not return to me empty,
but will accomplish what I desire
   and achieve the purpose for which I sent it.

Ingredients:


Crust
1 egg
1/2 cup honey
1 tsp vanilla
2 oz butter (1/2 stick)
1 cup oats
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt


Cheesecake Layer
1 egg
8 oz Neufchatel Cheese softened (1 package)
3/4 cup honey


1/2 cup diced nectarine
1/2 cup diced strawberries
1/4 cup diced kiwi


Directions:
1. mix crust ingredients and spread onto the bottom of an olive oil-sprayed foil-lined cake pan
2. blend together the cheesecake layer ingredients and pour onto crust
3. sprinkle the fruit over the cheesecake layer
4. bake for ~50-60 minutes at 350 degrees F

Garbanzo Cucumber Carrot Tomato Almond Salad




5 Blessed are those whose strength is in you,
   who have set their hearts on pilgrimage.

Ingredients:
5 small tomatoes quartered
1 tsp salt
1 tbsp olive oil
1.5 cups cooked garbanzo beans (12 oz. can)
1/2 cup slivered carrots
1/2 cup minced cucumber
1/4 cup chopped almonds


Directions:
1. combine all ingredients

Maple Lime Tilapia





 35 But someone may ask, “How are the dead raised? With what kind of body will they come?” 36 How foolish! What you sow does not come to life unless it dies. 37 When you sow, you do not plant the body that will be, but just a seed, perhaps of wheat or of something else. 38 But God gives it a body as he has determined, and to each kind of seed he gives its own body. 39 All flesh is not the same: Men have one kind of flesh, animals have another, birds another and fish another. 40 There are also heavenly bodies and there are earthly bodies; but the splendor of the heavenly bodies is one kind, and the splendor of the earthly bodies is another. 41 The sun has one kind of splendor, the moon another and the stars another; and star differs from star in splendor. Ingredients:
2 tbsp sesame oil
1 red onion diced
2 tsp salt
2 tbsp soy sauce
2 tbsp maple syrup
juice from 1 lime
8 tilapia filets (~3 oz each; thawed if frozen)

Directions:
1. fry the onion and salt in the oil for ~ 3 minutes


2. add the soy sauce, maple syrup, and lime and bring to a boil


3. arrange tilapia on foil lined baking pan
4. pour onion sauce over tilapia and coat the fish by turning around with a spoon


5. bake for ~30 minutes at 350 degrees F

Hawaiian Strawberry Mango Pineapple Salad with Coconut and Purple Sweet Potato Cream Layers




6 On this mountain the LORD Almighty will prepare
   a feast of rich food for all peoples,
a banquet of aged wine—
   the best of meats and the finest of wines.
7 On this mountain he will destroy
   the shroud that enfolds all peoples,
the sheet that covers all nations;
 8 he will swallow up death forever.

Ingredients:
2 cups diced pineapple




1 large mango diced




1 cup sliced strawberries


Purple Sweet Potato Cream:
1.5 cups mashed purple sweet potato
1/4 cup milk


Coconut Cream:
4 oz. neufchatel cheese (1/2 package)
1/2 cup shredded coconut
1/2 cup evaporated cane juice (or other sweetener)


Directions:
1. mix the purple sweet potato and coconut creams in two separate bowls






2. layer the fruit and creams in the order of your preference

Purple Sweet Potato Almond Swirl Mini Donuts





8 I will cleanse them from all the sin they have committed against me and will forgive all their sins of rebellion against me. 9 Then this city will bring me renown, joy, praise and honor before all nations on earth that hear of all the good things I do for it; and they will be in awe and will tremble at the abundant prosperity and peace I provide for it.’
 10 “This is what the LORD says: ‘You say about this place, “It is a desolate waste, without men or animals.” Yet in the towns of Judah and the streets of Jerusalem that are deserted, inhabited by neither men nor animals, there will be heard once more 11 the sounds of joy and gladness, the voices of bride and bridegroom, and the voices of those who bring thank offerings to the house of the LORD, saying,
   “Give thanks to the LORD Almighty,
   for the LORD is good;
   his love endures forever.”

Ingredients:
Dough
1 egg
1/2 cup cream
3/4 cup evaporated cane juice (or other sweetener)
2 tsp vanilla
2 tsp baking powder
1 tsp salt
2.5 cups flour
Almond Layer
1 cup almond flour (almonds powdered in the blender)
2 tbsp melted Neufchatel cheese
1/4 cup evaporated cane juice
Purple Layer
flesh from 1 medium purple sweet potato mashed
4 oz Neufchatel cheese (1/2 package)
1/4 cup evaporated cane juice

Directions: 
1. mix the dough, almond layer, and purple ingredients in three separate bowls




2. knead the dough for a couple minutes and divide into two balls
3. take a ball of dough and roll it into a rectangle; top with a layer of almond followed by a layer of purple (1/2 of all bowls)


4. fold into a few layers using a spatula to help release the dough from the counter surface


5. slice into ~1/3" slices


6. roll each slice between your palms into an ~5" rod and seal the ends to form a donut; repeat with other half of ingredients


7. place on foil-lined tray and bake for ~20 minutes at 350 degrees F


alternatively fold layered dough once and cut into cubes for square cookies

Purple Sweet Potatoes (My Favorite Food!)





15 Do not love the world or anything in the world. Ingredients:
several purple sweet potatoes (we order them from Hawaii Potato Veggie Farm)

Directions:
1. wash the potatoes well
2. arrange on a foil lined tray separated by at least 1/2 inch


3. bake for ~2 hrs at 350 degrees F or until purple syrup starts to come out

Mint Rainbow Warm Salad





Like the appearance of the bow that is in the cloud on the day of rain, so was the appearance of the brightness all around. Such was the appearance of the likeness of the glory of the Lord. And when I saw it, I fell on my face, and I heard the voice of one speaking. Ezekiel 1:28


Ingredients:
1 tbsp olive oil
1/2 red onion diced
2 tsp salt
1 head broccoli, stem removed, chopped
1/2 head cauliflower chopped
1 orange bell pepper diced
10 cherry tomatoes pureed
10 mint leaves chopped

Directions:
1. fry the onions and salt in the oil for ~5 minutes under medium high heat
2. add the other ingredients and fry for ~3 minutes
3. reduce heat to medium, cover lid, and simmer for 10 minutes

Mango Salsa on Salmon

Psalm 27:3,5,13-14
Though an army may encamp against me, My heart shall not fear; Though war may rise against me,In this I will be confident. For in the time of trouble He shall hide me in His pavilion; In the secret place of His tabernacle He shall hide me; He shall set me high upon a rock. I would have lost heart, unless I had believed that I would see the goodness of the LORD in the land of the living. Wait on the LORD; Be of good courage, And He shall strengthen your heart; 

Wait, I say, on the LORD!


Ingredients:
1 tsp olive oil
10 oz raw fresh salmon cut into small pieces
1 tsp salt
1 mango diced
1/3 red onion minced
1 tsp dried basil
1/2 tsp salt
1 tsp lemon juice


Directions:
1. Coat a pan with olive oil
2. add the salmon pieces (grey side down), sprinkle with 1 tsp salt, cover lid, and steam under medium heat for about 7 minutes
3. combine mango, red onion, basil, salt, and lemon juice
4. spoon mango mixture onto salmon pieces in serving dish

Hawaiian Double Sweet Potato Bars


 9 I proclaim your saving acts in the great assembly; 
   I do not seal my lips, LORD, 
   as you know.

   I speak of your faithfulness and your saving help. 
I do not conceal your love and your faithfulness 
   from the great assembly.

Ingredients:

Layer 1
2 cups oats
1 cup honey
1/2 cup coconut flour
1 tbsp cinnamon
1/4 cup whole wheat flour
1/3 cup milk
1/2 tsp salt

Layer 2
3 medium Hawaiian sweet potatoes (peeled and mashed)
1/4 cup coconut flour
1 tsp vanilla extract
1 egg
1/2 cup evaporated cane juice
1/2 tsp salt

Layer 3
3 medium orange sweet potatoes (peeled and mashed)
1/4 cup coconut flour
1 tsp vanilla extract
1 egg
1/2 cup evaporated cane juice
1/4 cup honey
1/2 tsp salt

Topping
1/2 cup Macadamia nuts (chopped)
1/4 cup dried figs (sliced)
1/4 cup dried cranberries
1/4 cup honey

Directions:

1. Preheat oven to 350 degrees 
2. mix layer1 ingredients, spread on large bar pan, and bake for 15 minutes
3. mix layer 2 ingredients and spread on top of layer 1
4. mix layer 3 ingredients and spread on top of layer 2
5. mix topping ingredients and sprinkle on top of layer 3
6. bake for ~40 minutes
