Strawberry Sweet Potato Scones




22 Now that you have purified yourselves by obeying the truth so that you have sincere love for each other, love one another deeply, from the heart. 23 For you have been born again, not of perishable seed, but of imperishable, through the living and enduring word of God. 24 For,

Ingredients:

1 egg
1/2 cup honey
1/3 cup olive oil
mashed flesh from 1 large cooked orange sweet potato
2 tsp vanilla
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup fresh diced strawberries

Directions:

1. beat together the egg, honey, oil, sweet potato, and vanilla
2. beat in the flour, baking powder, and salt
3. stir in the strawberries and drop by tablespoonfuls on a baking tray
4. bake for ~ 25 minutes at 350 degrees F

Sunflower Seed and Cranberry Sweet Potato Casserole




 1 Have mercy on me, O God,
   according to your unfailing love;
according to your great compassion

Ingredients:

2 cups cooked and mashed sweet potato
2 eggs
4 oz Neufchatel cheese (1/2 package)
8 oz evaporated milk
2 tbsp butter
2 tbsp whole wheat flour
1/2 cup honey
2 tsp cinnamon
1 tsp salt
1/4 cup dried cranberries
1/4 cup sunflower seeds

Directions:

1. blend together all ingredients
2. pour into an olive oil-sprayed cake pan
3. bake for ~45 min at 350 degrees F

Sweet Potato Sunflower Seed Honey Biscuit





18 “But will God really dwell on earth with men? The heavens, even the highest heavens, cannot contain you. Ingredients:


1 egg
1 cup mashed sweet potato
1/2 cup honey
2 tsp vanilla
3 oz butter (3/4 stick)
2 cups whole wheat flour
1 tsp salt
2 tsp baking soda
1/4 cup sunflower seeds


Directions:
1. mix together the egg, honey, butter, sweet potato, and vanilla
2. stir in the rest of the ingredients
3. drop by heaping tbspfuls onto a foil-lined pan
4. bake for ~ 25 minutes @ 350 degrees F

Sweet Potato Walnut Cocoa Dessert





6 The LORD your God will circumcise your hearts and the hearts of your descendants, so that you may love him with all your heart and with all your soul, and live. 7 The LORD your God will put all these curses on your enemies who hate and persecute you. 8 You will again obey the LORD and follow all his commands I am giving you today. 9 Then the LORD your God will make you most prosperous in all the work of your hands and in the fruit of your womb, the young of your livestock and the crops of your land. Ingredients:


Crust
2 eggs
1 tsp vanilla
1 cup honey
1 cups walnut flour (walnuts powdered in the blender)
2 cups oat flour (oats powdered in the blender)
1 tsp baking soda
1/2 tsp salt

Cocoa Layer
4 eggs
2 cups sweet potato pureed
1 cup honey
1 tsp vanilla
2 tbsp butter softened 
1/4 cup cocoa powder

Directions:

1. mix crust ingredients and pour onto an olive oil-sprayed foil-lined pan
2. mix cocoa layer ingredients and pour over crust
3. bake for ~ 45 minutes at 350 degrees F

Cocoa Sweet Potato Cream Squares




8 By faith Abraham, when called to go to a place he would later receive as his inheritance, obeyed and went, even though he did not know where he was going. 9 By faith he made his home in the promised land like a stranger in a foreign country; he lived in tents, as did Isaac and Jacob, who were heirs with him of the same promise. 10 For he was looking forward to the city with foundations, whose architect and builder is God.

Ingredients:
3 eggs
2 cups mashed sweet potatoes (I used Oriental yellow sweet potatoes)
4 oz Neufchatel cheese softened (1/2 package)
2 tsp vanilla
1  cup evaporated cane juice (or other natural sweetener)
1/2 cup cocoa powder
1/2 tsp salt
1 tsp baking soda


Directions:
1. mix the eggs, potato, cheese, vanilla, and juice
2. stir in the cocoa powder, salt, and baking soda
3. spread onto an olive oil-sprayed foil-lined tray
4. bake for ~30 minutes at 350 degrees F
5. cut into small squares




Sweet Potato Pecan Brazil Nut Oat Bars





 3 His divine power has given us everything we need for life and godliness through our knowledge of him who called us by his own glory and goodness. 4 Through these he has given us his very great and precious promises, so that through them you may participate in the divine nature and escape the corruption in the world caused by evil desires.

Ingredients:
1 cup pecan flour (pecans powdered in the blender)
1/2 cup Brazil Nut Flour (brazil nuts powdered in the blender)
19 oz pureed tofu (I used 1 box of Trader Joe's)
1.5 cups honey
1.5 cups oat flour (oats powdered in the blender)
1 tsp baking soda
1/2 tsp salt
1 egg
flesh from 1 large baked sweet potato (mashed)


Directions:
1. mix all ingredients in a bowl
2. spread onto an olive oil-sprayed foil-lined pan
3. bake for ~ 45-60 minutes

Chocolate Sweet Potato Bars with Molasses Oat Crust





17 “Behold, I will create 
   new heavens and a new earth. 
The former things will not be remembered, 
   nor will they come to mind.

   and its people a joy.

Ingredients:


Crust:
2 eggs
1 cup honey
1/4 cup molasses
1.5 cup whole wheat flour
1.5 cups oats
1/4 tsp salt
1 tsp baking soda


Chocolate Layer:
1 egg
2 oz butter (1/2 stick)
2 cups mashed sweet potato (I used Louisiana sweet potatoes which are yellow)




1 cup honey
1/2 cup cocoa powder


Directions:


1. for the crust, mix the egg, honey, and molasses
2. stir in the flour, oats, baking soda, and salt
3. spread crust batter onto an olive oil-sprayed foil-lined pan




4. mix together the chocolate layer ingredients and pour on top of the crust batter


 and spread level with a spoon
5. bake for ~30-40 minutes at 350 degrees F

Chinese Mooncake





 14 Righteousness and justice are the foundation of your throne;

Emily Noble gave me this idea to try making mooncakes.


Ingredients:


Dough:
2 eggs
1/3 cup honey
2 tbsp olive oil
2 tsp baking soda
~1.5 cups whole wheat flour (add more to achieve a soft rollable dough)

Filling:
mashed flesh from 2 large Oriental sweet potatoes (baked)


2 oz butter (1/2 stick)
1/4 cup evaporated cane juice

Egg Wash:
1 egg
2 tbsp honey


Directions:
1. mix the eggs, honey, and oil
2. knead in the bakind soda and flour (adding more if necessary) to achieve a soft rollable dough
3. blend together the filling ingredients (with an egg beater)
4. use a rolling pin to roll a small ball of dough into a small circle
5. put a heaping tablespoon (or so) of filling in the middle of the dough circle and fold up sides
6. take a very small ball of dough and roll out into a small circle that is large enough to cover the top of the filling; seal the sides of dough using your fingers
7. use a cup or round serving spoon (~2-3 inch diameter) as a mold: press down firmly on center of filled dough; repeat with remaining dough and filling
8. beat together egg wash ingredients and brush on top of cakes
9. bake for ~ 20 minutes at 350 degrees F

Purple Sweet Potato Pinwheels





   36 “No one knows about that day or hour, not even the angels in heaven, nor the Son, but only the Father. 37 As it was in the days of Noah, so it will be at the coming of the Son of Man. 38 For in the days before the flood, people were eating and drinking, marrying and giving in marriage, up to the day Noah entered the ark; 39 and they knew nothing about what would happen until the flood came and took them all away. That is how it will be at the coming of the Son of Man.40 Two men will be in the field; one will be taken and the other left. 41 Two women will be grinding with a hand mill; one will be taken and the other left.
   42 “Therefore keep watch, because you do not know on what day your Lord will come. 43 But understand this: If the owner of the house had known at what time of night the thief was coming, he would have kept watch and would not have let his house be broken into. 44 So you also must be ready, because the Son of Man will come at an hour when you do not expect him.

Ingredients:


Dough
1/2 cup honey
1 tsp vanilla
1.5 oz butter (1/3 stick)
1 tsp baking soda
1/4 tsp salt
2 cups whole wheat flour


Filling
1/2 cup mashed purple sweet potato
4 oz Neufchatel cheese softened (1/2 package)
.5 oz butter (1/6 stick)


Directions:
1. mix the honey, vanilla, and butter
2. stir in the baking soda, salt, and flour to achieve a rollable dough (add flour/milk as necessary)
3. mix the filling ingredients
4. using a rolling pin roll the dough into (a) large rectangle(s)
5. spread filling (desired amount) on the entire surface of the rectangle of dough 
6. roll up like a scroll and slice into 1/2 inch thick slices
7. spread on a foil-lined tray and bake for ~ 15 minutes at 350 degrees F






I ended up making 3 rectangles and dividing the filling into thirds (each third for 1 rectangle), but you can adjust the size of the rectangle to adjust your preferred wheel size.

Purple Sweet Potato Fruit Brown Rice Pancake Dessert





17 “Be on your guard against men; they will hand you over to the local councils and flog you in their synagogues. 18 On my account you will be brought before governors and kings as witnesses to them and to the Gentiles. 19 But when they arrest you, do not worry about what to say or how to say it. Matthew 10


Ingredients:


Pancakes
1 egg
2 tbsp olive oil
1/2 cup honey
1/2 cup milk
1 tsp vanilla
1/4 tsp salt
1 tsp baking soda
1 cup brown rice flour (raw brown rice powdered in the blender)
1/2 cup whole wheat flour

Purple Sweet Potato Layer
flesh from 1 large purple sweet potato mashed
2 oz. butter (1/2 stick)
1/4 cup honey

Fruit Layer
1 cup pineapple diced
1 cup strawberries diced
1/4 cup maple syrup

Crushed Raw Nuts for Garnish


Directions:
Pancakes
1. mix egg, olive oil, honey, milk and vanilla
2. stir in salt, baking soda, and flours


3. pour tablespoon aliquots of batter onto olive oil-sprayed pan heated to medium heat


4. wait for bubbles to form and flip (~60 sec)
5. wait for about 30 sec


6. cut pancakes into strips



Purple Potato Layer
mix purple potato, honey, and butter

Fruit Layer
bring fruit to a boil and continue cooking stirring continually until fruit is thick like jam



7. layer strips of pancake, purple sweet potato layer, and jam


Top with nuts

Basic Crepes




15 The eyes of the LORD are on the righteous

Ingredients:
1 egg
1/4 cup milk
1/4 cup honey
1 tsp vanilla
1 tsp baking soda
1/8 tsp salt
1 cup whole wheat flour


Directions:
1. mix together egg, milk, honey, and vanilla
2. stir in the baking soda, salt, and flour




3. pour 2 tbsp onto olive oil-sprayed cooking pan under medium low heat
4. swirl pan to extend circle of crepe




5. when bubbles form (~30-60 secs) loosen edges with a spatula and flip
6. cook on the other side for ~10 secs






Good filled with sliced purple sweet potatoes and cheese




Hawaiian Strawberry Mango Pineapple Salad with Coconut and Purple Sweet Potato Cream Layers




6 On this mountain the LORD Almighty will prepare
   a feast of rich food for all peoples,

Ingredients:
2 cups diced pineapple




1 large mango diced




1 cup sliced strawberries


Purple Sweet Potato Cream:
1.5 cups mashed purple sweet potato
1/4 cup milk


Coconut Cream:
4 oz. neufchatel cheese (1/2 package)
1/2 cup shredded coconut
1/2 cup evaporated cane juice (or other sweetener)


Directions:
1. mix the purple sweet potato and coconut creams in two separate bowls






2. layer the fruit and creams in the order of your preference

Purple Sweet Potato Almond Swirl Mini Donuts





8 I will cleanse them from all the sin they have committed against me and will forgive all their sins of rebellion against me. 9 Then this city will bring me renown, joy, praise and honor before all nations on earth that hear of all the good things I do for it; and they will be in awe and will tremble at the abundant prosperity and peace I provide for it.’
 10 “This is what the LORD says: ‘You say about this place, “It is a desolate waste, without men or animals.” Yet in the towns of Judah and the streets of Jerusalem that are deserted, inhabited by neither men nor animals, there will be heard once more 11 the sounds of joy and gladness, the voices of bride and bridegroom, and the voices of those who bring thank offerings to the house of the LORD, saying,
   “Give thanks to the LORD Almighty,
   for the LORD is good;

Ingredients:
Dough
1 egg
1/2 cup cream
3/4 cup evaporated cane juice (or other sweetener)
2 tsp vanilla
2 tsp baking powder
1 tsp salt
2.5 cups flour
Almond Layer
1 cup almond flour (almonds powdered in the blender)
2 tbsp melted Neufchatel cheese
1/4 cup evaporated cane juice
Purple Layer
flesh from 1 medium purple sweet potato mashed
4 oz Neufchatel cheese (1/2 package)
1/4 cup evaporated cane juice

Directions: 
1. mix the dough, almond layer, and purple ingredients in three separate bowls




2. knead the dough for a couple minutes and divide into two balls
3. take a ball of dough and roll it into a rectangle; top with a layer of almond followed by a layer of purple (1/2 of all bowls)


4. fold into a few layers using a spatula to help release the dough from the counter surface


5. slice into ~1/3" slices


6. roll each slice between your palms into an ~5" rod and seal the ends to form a donut; repeat with other half of ingredients


7. place on foil-lined tray and bake for ~20 minutes at 350 degrees F


alternatively fold layered dough once and cut into cubes for square cookies

Purple Sweet Potatoes (My Favorite Food!)





15 Do not love the world or anything in the world. If anyone loves the world, the love of the Father is not in him. 16 For everything in the world—the cravings of sinful man, the lust of his eyes and the boasting of what he has and does—comes not from the Father but from the world. 17 The world and its desires pass away, but the man who does the will of God lives forever. Ingredients:
several purple sweet potatoes (we order them from Hawaii Potato Veggie Farm)

Directions:
1. wash the potatoes well
2. arrange on a foil lined tray separated by at least 1/2 inch


3. bake for ~2 hrs at 350 degrees F or until purple syrup starts to come out
