Egg Bake with Cream Cheese, Bell Peppers, and Spinach (for Bible study)


Lordbe gracious to us; we have waited for You.
Be their strength every morning,
Our salvation also in the time of distress. Is 33:2


Ingredients:

7 eggs
8 oz cream cheese softened
1 tsp salt

3 cloves garlic minced
1 cup chopped raw spinach
1/2 cup diced bell peppers

1 tbsp olive oil
1/4 cup shredded mozzarella cheese

Directions:

1. preheat oven to 350 degrees F
2. beat together the eggs, cream cheese, and salt
3. stir in the garlic, spinach, and peppers
4. coat a shallow cake pan with the olive oil
5. pour the egg mixture into the pan
6. sprinkle with cheese
7. bake for ~ 30 minutes

Ingredients:


2 eggs (protein)
1 cup evaporated cane juice (or brown sugar)
1/4 cup molasses (iron, Mg)
1/2 cup powdered walnuts (omega 3)
1/4 cup sesame seeds
1/4 cup peanut butter
1/4 cup softened butter (1/2 stick)
~ 3 cups rolled oats
1/3 cup naturally sweetened chocolate chips
1 tsp salt
1 tsp baking soda
1 tsp cinnamon


Directions:


1. preheat oven to 350 degrees F
2. mix together all ingredients thoroughly 
3. spread onto an olive oil-sprayed foil-lined tray (~ 12"X16")
4. bake for ~ 30-40 minutes

Mango, Peach, and Walnut Oat Bars

Ingredients:

1/4 cup butter softened (1/2 stick)
3/4 cup honey
1 tsp vanilla
2 eggs
1 cup walnut flour (powdered walnuts)
1.5 cups oat flour (powdered rolled oats)
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 mango, peeled and diced
2 peaches diced

Directions:

1. preheat oven to 350 degrees F
2. use an egg beater to mix the butter, honey, vanilla, and eggs
3. beat in the walnut and oats flours, baking soda, salt, and, cinnamon
4. use a large spoon to stir in the mango and nectarine
5. pour into an olive oil-sprayed cake pan
6. bake for ~ 45 minutes

Sweet Potato Walnut Cocoa Dessert

Ingredients:


Crust
2 eggs
1 tsp vanilla
1 cup honey
1 cups walnut flour (walnuts powdered in the blender)
2 cups oat flour (oats powdered in the blender)
1 tsp baking soda
1/2 tsp salt

Cocoa Layer
4 eggs
2 cups sweet potato pureed
1 cup honey
1 tsp vanilla
2 tbsp butter softened 
1/4 cup cocoa powder

Directions:

1. mix crust ingredients and pour onto an olive oil-sprayed foil-lined pan
2. mix cocoa layer ingredients and pour over crust
3. bake for ~ 45 minutes at 350 degrees F

Wild Rice Soup for "Jazzed Up"




7 Ascribe to the LORD, O families of nations,
   ascribe to the LORD glory and strength.

Ingredients:


16 cups salted homemade chicken stock 
1.5 cup wild raw uncooked


2/3 cup butter
Vegetables
1 large green pepper diced
1 large red pepper diced
6 stalks celery diced
4 carrots peeled and diced
5 cloves garlic minced
2 medium onions diced


1 apple (I used "Harrold Red" a gift from dad's work friend)




2 tsp curry powder
2 tsp white pepper


1 cup white whole wheat flour


4 cups half and half
4 cups cooked chicken cut into pieces (I used drumstick meat after boiling the drumsticks for the stock)






1 cup slivered almonds




Directions: (directions are for half the recipe because the soup was made in two batches)


1. boil the rice in the stock until the rice is cooked (bring to a boil and let simmer for ~ 1 hr)
2. cook 1/2 the vegetables in 1/3 cup butter until the vegetables are cooked (~ 5 minutes under medium heat)




3. add 1/2 cup flour to the vegetables and continue cooking for ~ 2 minutes under medium heat




4. add 1/2 of the rice/stock, 2 cups of half and half, 1/2 cup almonds, and 2 cups chicken
5. bring to a boil 




6. repeat with other half of ingredients










Chocolate Pumpkin Soup




15 Then he blessed Joseph and said,

Ingredients:
32 oz canned pumpkin
4 lb chocolate chips
8 cups milk
4 cups half and half


Directions:
1. bring milk to a boil
2. add the chocolate chip and continue stirring under medium heat under chocolate chips are melted
3. add the pumpkin and half and half and bring to a boil
4. serve warm

Creamy Peach Kiwi Walnut Oat Cake





4 But you, brothers, are not in darkness so that this day should surprise you like a thief. 5 You are all sons of the light and sons of the day. Ingredients:


Cake
2 eggs
3/4 cup honey
1 tsp vanilla
1 cup walnut flour (walnuts powdered in the blender)
2 cups oat flour (oats powdered in the blender)
1/2 tsp salt
2 tsp baking soda

Cream
4 oz Neufchatel cheese (1/2 package)
1/2 cup honey
1 egg

Fruit
3 peaches diced
2 kiwi fruit diced

Directions:

1. mix together the cake ingredients and pour into an olive oil-sprayed foil-lined pan
2. beat together the cream ingredients and pour over cake batter
3. mix the fruit and spoon over cream
4. bake for 45-60 minutes at 350 degrees F

Sweet Potato Pecan Brazil Nut Oat Bars





 3 His divine power has given us everything we need for life and godliness through our knowledge of him who called us by his own glory and goodness. 4 Through these he has given us his very great and precious promises, so that through them you may participate in the divine nature and escape the corruption in the world caused by evil desires.

Ingredients:
1 cup pecan flour (pecans powdered in the blender)
1/2 cup Brazil Nut Flour (brazil nuts powdered in the blender)
19 oz pureed tofu (I used 1 box of Trader Joe's)
1.5 cups honey
1.5 cups oat flour (oats powdered in the blender)
1 tsp baking soda
1/2 tsp salt
1 egg
flesh from 1 large baked sweet potato (mashed)


Directions:
1. mix all ingredients in a bowl
2. spread onto an olive oil-sprayed foil-lined pan
3. bake for ~ 45-60 minutes 





Saturday

Italian Pole Beans, Black-eyed Peas, Tomatoes, and Radish with Brown Rice Pasta




4 Now when a man works, his wages are not credited to him as a gift, but as an obligation. 5 However, to the man who does not work but trusts God who justifies the wicked, his faith is credited as righteousness. 6 David says the same thing when he speaks of the blessedness of the man to whom God credits righteousness apart from works:

   whose sin the Lord will never count against him.Romans 4

Ingredients:


Vegetable Mix
1/4 cup olive oil
1 onion diced
1 tbsp salt
1 cup chopped Italian pole beans
1 cup chopped white Daikon radish (or any radish)
1 cup diced tomatoes (I used Roma)
1/4 cup chopped basil


Pasta
8 oz dry brown rice pasta
1 quart water
2 cups cooked black-eye peas


Directions:
1. fry the onion and salt in the oil for ~ 5 minutes under medium-high heat
2. add the rest of the vegetable mix ingredients and continue frying for ~ 5 minutes under medium high heat




3. meanwhile boil the pasta in the water to the al dente state (~7-10 minutes) and drain if necessary




4. stir the peas and vegetable mix into the pasta




Monday

Almond Milk

Ingredients:
1 cup raw almonds
6 cups water
6 Calcium tablets (300 mg/tablet)
1 tsp vanilla (optional)
dates, honey, stevia (optional)

Directions:
1. Blanch the almonds by boiling them for a few minutes until skins are loosened

2. drain water and wait for almonds to cool, remove skins

3. add almonds, water, calcium, and optional ingredients (if you are using them) to a blender and blend for ~60 seconds
4. strain and keep the almond pulp for other recipes such as Cardamom Almond Candy

Cardamom Almond Candy

Ingredients:
pulp from 1 cup of almond used to make almond milk (~1.5 cups)

1 tbsp butter
1/4 cup milk
1 pinch salt
1/2 cup honey

Directions:
1. bring all ingredients to a boil

2. simmer on medium heat for ~20 minutes stirring constantly until thick

3. pour onto olive oil sprayed foil-lined tray

4. cool before cutting into squares

Ingredients:
7 mozzarella string cheese sticks (made into powder using a blender or food processor)
1 egg
1 cup maple syrup
1 tbsp vanilla
1 tsp baking soda
1 cup sorghum flour
Frosting
1/3 cup peanut butter (no additives)
1/3 cup honey
1/4 cup cocoa powder


Directions
1. mix cheese powder, egg, maple syrup, vanilla, and baking soda
2. stir-in flour
3. pour batter into greased cake pan and bake for ~45 minutes at 350 degrees F
4. mix frosting ingredients and frost cooled cake
