Chicken, Brown Rice, and Garbanzo Bean Soup



There will be silence before You, and praise in Zion, O God,
And to You the vow will be performed.
O You who hear prayer,

How blessed is the one whom You choose and bring nearto You
To dwell in Your courts.

Ingredients:

2 tbsp butter
1 cup chopped cherry tomatoes
1/4 cup fresh chopped basil (or other herbs of your choice)
1 tsp salt (add additional tsp if garbanzo beans are unsalted)
1 tsp garlic powder
2 cups diced cooked chicken
2 cups garbanzo beans cooked and pureed in 1 cup water (use a blender)
1 cup cooked brown rice

Directions:

1. add the butter, tomatoes, basil, salt, and garlic powder to a large cooking pot and fry on medium heat for ~ 3 minutes
2. add the chicken and continue frying for ~ 3 minutes
3. add the pureed beans and rice, bring to a boil, cover lid, and let simmer on low heat for ~ 15 minutes




Summer Chicken and Vegetable Pasta




Then you will say on that day,
“ I will give thanks to You, O Lord;

And He has become my salvation.”

Ingredients:

4 cups cooked whole wheat spiral noodles

2 tbsp olive oil
1 lb raw chicken
2 tsp salt
1 tsp garlic powder

1 tbsp olive oil
2 bell peppers cored and diced
1 large zucchini diced
2 tsp salt

2 cups chopped tomatoes
1/2 cup chopped fresh basil
1/2 cup champagne grapes
1 cup shredded mozzarella cheese

Directions:

1. fry the chicken, salt, and garlic powder in the oil on medium heat until cooked thoroughly (~15 minutes)
2. fry the pepper, zucchini, and salt in the olive oil on medium heat for ~ 5 minutes
3. combine all ingredients

Brown Rice Noodles and Chicken Alfredo (with Selah's Touch)

Ingredients:

3 cups freshly cooked brown rice noodles 
3 cups milk
1/3 cup whole wheat flour
2 tsp garlic powder
2 tsp salt
1 tsp dried dill
1 tsp dried Italian herbs
1/2 cup shredded mozzarella cheese
1 cup cooked and sliced chicken breast

Directions:

1. in a cup mix together .5 cups of milk and the flour until there are no flour lumps
2. add the flour/milk mixture in the cup to the other 2.5 cups of milk in a pan and bring to a boil on medium heat while stirring
4. continue cooking and stirring  on medium-low heat until the sauce is thickened to your liking (~ 7 minutes)
5. stir in the salt, garlic powder, cheese, and herbs
6. add and combine the chicken and noodles

with Selah, Ben, Edwin, Jaden, and Adam today

Chicken Wild Rice Garbanzo Bean Casserole




Lorddo not rebuke me in Your anger,
Nor chasten me in Your wrath.

But You, O Lord— how long? Ps 6

Ingredients:

1 cup wild rice cooked in 4 cups chicken broth
8 oz chicken cooked and cubed
1 cup cooked garbanzo beans

1/2 cup butter (1 stick)
2 large carrots peeled and diced
1 onion diced
3 cloves garlic minced
2 apples diced (I used pink lady apples)
2 tsp salt
1/4 cup fresh rosemary leaves

1/3 cup white whole wheat flour

2 cups milk

1/4 cup shredded cheese

Directions:

1. heat the butter on medium heat in a large pot
2. add carrots, onion, garlic, apples, rosemary, and salt and cook for ~ 10 minutes on medium heat while stirring
3. add flour and cook for ~ 2 minutes while stirring
4. add milk and bring to a boil while stirring
5. add the rice and chicken and bring to a boil
6. simmer on low heat for ~ 15 minutes
7. pour into large baking tray and sprinkle with cheese; cover with aluminum foil
8. bake for ~ 15 minutes at 350 degrees F (optional; if prepared ahead of time)

21 Spice Chicken

Ingredients:

32 oz chicken breasts cut into 8-10 pieces
2 tsp salt
1/4 cup butter softened (1/2 stick)
Trader Joe's 21 Spice Salute


(ingredients :Onion, Spices (black pepper, celery seed, cayenne pepper, parsley, basil, majoram, bay leaf, oregano, thyme, savory, rosemary, cumin,  mustard, coriander), Garlic, Carrot, Orange peel, Tomato granules, Lemon juice powder, Oil of lemon, Citric acid)

Directions:

1. preheat oven to 350 degrees F
2. mix together the salt and butter in a large bowl
3. add the chicken to the bowl and combine thoroughly until the chicken is coated in the butter
4. place the chicken pieces onto a foil-lined baking tray (separated by ~ .5 inch)
5. sprinkle the spices over the chicken (~.5 tsp per/piece)
6. bake for ~ 45-50 minutes

Crepe-like Chicken





43 Then the men of Israel answered the men of Judah, “We have ten shares in the king; and besides, we have a greater claim on David than you have. So why do you treat us with contempt? Were we not the first to speak of bringing back our king?”2 Sam 19


Ingredients:


4 eggs
1/2 cup cooked chicken cut into small pieces
1/2 tsp salt
milk
olive oil


Directions:


1. heat a shallow pan to medium heat
2. in a blender or food processor, puree the chicken with the eggs and salt
3. pour the chicken mixture into a bowl and add enough milk to make a pancake consistency batter
4. coat pan lightly with olive oil
5. drop batter by tspfuls onto the pan and wait until bubbles start to form (as you would when making pancakes)
6. flip once and wait ~ 30 secs.
7. repeat steps 4-6 with remaining batter

You can use these the make wraps with whole wheat tortillas, Provolone cheese, and "Crepe-like" chicken.


Saturday

Coriander Chicken, Sauteed Peppers, Carrots, Red Onions, Olives, and Basil Sandwiches




 53 Jesus said to them, “I tell you the truth, unless you eat the Flesh of the Son of Man and drink His blood, you have no life in you. 54 Whoever eats My flesh and drinks My blood has eternal Life, and I will raise him up at the last day. John 6

Ingredients:

whole wheat sandwich rolls or buns 

Coriander Chicken

1 tbsp olive oil
4 oz raw chicken cut into small pieces
1 tsp salt
1/4 tsp coriander
1/4 tsp black pepper

Sauteed Peppers, Carrots, Olives, and Red Onions

2 tbsp olive oil
1/2 red onion diced
2 tsp salt
1 large bell pepper diced
2 large carrots peeled and diced
1/4 cup sliced olives
1 tbsp crushed dried red chilli (optional; dad and mom like everything spicy)

fresh basil leaves
shredded mozzarella cheese (optional)

Directions:

1. Coriander Chicken: fry the chicken, salt, coriander, and pepper in the olive oil under medium heat for ~ 5 minutes, cover lid and continue cooking for ~ 10 minutes or until cooked thoroughly (stirring every 2 minutes)
2. Sauteed Peppers, Carrots, Olives and Red Onions: Fry the peppers, carrots, onions, olives, and salt in the olive oil for ~ 5 minutes under medium heat
3. add the cheese to one half of the bun/roll and toast the bread until the cheese melts
4. spread the chicken, vegetables, and fresh basil leaves over the cheese and top with the other half of the bun/roll

Rosemary Chicken and Potatoes





13 Therefore, with minds that are alert and fully sober, set your hope on the grace to be brought to you when Jesus Christ is revealed at his coming. 14 As obedient children, do not conform to the evil desires you had when you lived in ignorance. 15But just as he who called you is holy, so be holy in all you do; 16 for it is written: “Be holy, because I am holy.” I Peter 1


Ingredients:


2 tbsp olive oil
1 onion diced
3 cloves garlic minced
3 carrots peeled and diced
1 tbsp salt
1 tsp pepper
2 tbsp fresh rosemary (or 1 tbsp dried)
1/4 cups whole wheat flour
2 cups cooked and cut chicken meat
2 cups chicken stock
3 cups milk

Directions:

1. fry the onions, garlic, carrots, salt, pepper, and rosemary in the oil on medium heat for ~ 5 minutes 
2. add the flour and continue frying while stirring for ~ 3 minutes
3. add the remaining ingredients and bring to a boil
4. cover lid and let simmer for ~ 15 minutes


South Indian Chicken Curry





6 In all this you greatly rejoice, though now for a little while you may have had to suffer grief in all kinds of trials. 7 These have come so that the proven genuineness of your faith—of greater worth than gold, which perishes even though refined by fire—may result in praise, glory and honor when Jesus Christ is revealed. 8 Though you have not seen him, you love him; and even though you do not see him now, you believe in him and are filled with an inexpressible and glorious joy, 9 for you are receiving the end result of your faith, the salvation of your souls.I Peter 1


Ingredients:


1/4 cups olive oil
1 onion diced
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp salt
1 tsp turmeric
2 lb chicken quarters; skin removed (dad likes the bones left in)
2 cups fresh tomatoes diced
2 jalapeno peppers diced
1/4 cup fresh cilantro leaves
2 tbsp curry spice mix (your chosen combination of powdered cloves, cinnamon, cumin, mustard, coriander, star-anise, bay leaves, etc.)


Directions:


1. fry the onion, garlic, ginger, salt, and turmeric under on medium heat for ~ 7 minutes
2. add the chicken and continue frying while stirring for ~ 5 minutes
3. add the rest of the ingredients and bring to a boil
4. cover lid and let simmer for ~ 1 hr

Lemon Pepper Chicken




9 “As I looked,
   “thrones were set in place,
   and the Ancient of Days took his seat.

   coming out from before him.

Ingredients:

2 tbsp butter softened
1 tsp black pepper
1 tbsp lemon
1 tsp minced lemon rind
2 tsp salt
12 oz raw chicken breast diced

Directions:

1. mix the first 5 ingredients
2. stir in the chicken
3 spread onto a baking tray and bake for ~ 25 minutes at 350 degrees F



Breaded Lime Chicken Strips




43 And just as you saw the iron mixed with baked clay, so the people will be a mixture and will not remain united, any more than iron mixes with clay.

Ingredients:

12 oz raw chicken breast cut into strips

1 egg
2 tbsp butter

1/4 cup powdered whole wheat bread (put the bread in the blender)
2 tsp salt
1 tsp white pepper
3 cloves garlic minced
2 tsp lime rind minced

Directions:

1. mix the egg and butter in a bowl
2. mix the bread, salt, white pepper, garlic and rind in another bowl
3. dip the chicken strips in the egg mixture 
4. dip the chicken strips in the bread mixture
5. arrange on tray (separated strips) and bake at 350 degrees for ~30 minutes

Dad's Indian Chicken (for Anand and Prassu)


25 At that [cj]time Jesus said, “I praise You, Father, Lord of heaven and earth, that You have hidden these things from the wise and intelligent and have revealed them to infants. 26 Yes, Father, for this way was well-pleasing in Your sight. 27 All things have been handed over to Me by My Father; and no one knows the Son except the Father; nor does anyone know the Father except the Son, and anyone to whom the Son wills to reveal Him. Ingredients:

1/3 cup olive oil
2 red onions diced
7 cloves garlic minced
1 inch ginger root crushed
(or instead of above ingredients use 1/4 cup ginger-garlic paste that Anand has)
2 lbs fryer chicked cut into pieces
2 tsp salt
1 tsp turmeric
2 tsp chili powder
1 tbsp crushed red chili pepper
1/4 cup chopped cilantro
3 roma tomatoes diced

Directions:

1. on medium-high heat fry the onions in the oil until the onions are starting to get burned
2. add the ginger and garlic and fry until these two are almost burned as well
3. add the chicken, salt, and turmeric and fry until the outside of the chicken is almost burned
4. add the remaining ingredients, bring to a boil, cover lid


5. cook on medium heat for ~ 15 minutes

Fragrant Chicken and Brown Rice Quinoa Potluck Dish





 8 But I am like an olive tree

Ingredients:

Chicken

1/4 cup olive oil
4 cloves garlic minced
1 large onion diced
2 lb raw fresh chicken
1 tbsp salt
2 tsp curry powder
1 tsp white pepper
juice from 1/2 lime
2 zucchini diced
1 carrot peeled and diced
1 bell pepper diced

Rice and Quinoa

2 cups dry brown rice
1/2 cup dry quinoa
2 tsp salt
4 tbsp butter (1/2 stick)
7 cups water

cilantro and dried cranberries for garnish 

Directions:

1. fry the onions, garlic, salt, curry powder, and white pepper in the olive oil fo r~ 5 minutes under medium-high heat
2. add the chicken and continue frying while stirring for ~ 5 minutes
3. cover lid and reduce heat to medium; simmer for ~ 15 minutes
4. all the zucchini, carrots, and peppers
5. meanwhile bring the rice/quinoa ingredients to a boil in another pot, reduce heat to low and let simmer for ~ 1 hr
6. in a casserole dish pour the rice onto one side on the dish
7. pour the chicken mixture onto the other side of the dish
8. bake for ~ 20 minutes before serving 

garnish with cilantro and dried cranberries

Mediterranean Chicken





 8 Good and upright is the LORD; 
   therefore he instructs sinners in his ways.

   and teaches them his way.

   toward those who keep the demands of his covenant. 
11 For the sake of your name, LORD, 
   forgive my iniquity, though it is great.



Ingredients:


2 lb raw fresh boneless skinless chicken cut into pieces
2 cups pureed fresh tomatoes
5 cloves garlic minced
2 tsp pepper
1 tbsp salt
1/4 cup olive oil
1/4 cup fresh basil leaves
2 zucchini diced


shredded mozzarella cheese (opt)


Directions:


1. toss all ingredients in a large bowl
2. spread onto a baking pan with high edges (chicken water will come out); sprinkle with cheese
3. bake for ~ 45 minutes covered at 350 degrees F

Creamy Chicken Pasta





 9 If the ministry that condemns men is glorious, how much more glorious is the ministry that brings righteousness! 10For what was glorious has no glory now in comparison with the surpassing glory. 11 And if what was fading away came with glory, how much greater is the glory of that which lasts! 2 Cor 3


Ingredients:


1 tbsp olive oil
1 onion diced
1 tbsp salt
1/2 cup whole wheat flour
1/2 cup half and half
3 cups milk
1 cup mozzarella cheese

2 cups cooked chicken cut into small pieces
1 tsp black pepper
16 oz raw pasta cooked in 4 quarts of water (drained)


Directions:


1. fry the onion and salt in the oil for ~ 5 minutes under medium-high heat
2. add the flour and continue cooking while stirring for 3 minutes
3. add the half & half and milk while stirring continuously
4. combine with pepper, cheese, chicken, and pasta and bring to a simmer
