Red Onion and Banana Pepper Beef Slices



What shall we say then? Are we to continue in sin so that grace may increase? May it never be! How shall we who died to sin still live in it? Or do you not know that all of us who have been baptized into Christ Jesus have been baptized into His death? Therefore we have been buried with Him through baptism into death, so that as Christ was raised from the dead through the glory of the Father, so we too might walk in newness of life. For if we have become united with Him in the likeness of His death, certainly we shall also be in the likeness of His resurrection, knowing this, that our old self was crucified with Him, in order that our body of sin might be done away with, so that we would no longer be slaves to sin;for he who has died is freed from sin. Ingredients:

2 lb raw sirloin tip steak cut into 1/4 inch slices
2 tsp salt
2 tsp garlic powder
1 large red onion sliced
1 banana pepper cored and diced
2 tsp lemon juice
1/4 cup olive oil

Directions:

1. combine all ingredients and let marinate in the fridge for at least 30 minutes
2. preheat oven to 350 degrees F
3. spread the slices onto a large baking tray and pour the remaining marinade over them
4. cover the tray with aluminum foil and bake for ~ 1 hr

Cake Roll with Peanut Cream (Korean Mozart Cake)





 3 And I heard a loud voice from the throne saying, “Now the dwelling of God is with men, and He will live with them. They will be His people, and God Himself will be with them and be their God. 4 He will wipe every tear from their eyes. There will be no more death or mourning or crying or pain, for the old order of things has passed away. Rev 21


Ingredients:


6 eggs (separated)
1/2 cup water
3/4 cup honey
1.5 cups whole wheat flour
2 tsp vanilla
1/2 tsp salt

Peanut Cream

2 tbsp butter softened
1/4 cup honey
1/4 cup peanut flour (or 3 tbsp peanut butter)

Directions: preheat oven to 325 degrees F

1. beat the egg yolks, water, and honey on medium speed for 5 minutes
2. beat in the flour and salt
3. beat the egg white until stiff peaks form


4. fold the egg white into the batter
5. pour onto an olive oil-sprayed foil lined tray
6. bake for 25 minutes at 325 degrees F

Meanwhile, I was giving the blessed and brilliant Selah a science lesson (and my first middle school science tutoring experience)



mom already ate a piece :)

7. roll up with foil into a scroll, let cool, unroll and peel off foil
8. beat together the peanut cream ingredients and spread over entire surface of cake


9. roll up like a scroll again

Fragrant Sauteed Vegetables





11 Then I saw a great white throne and Him who was seated on it. Earth and sky fled from His presence, and there was no place for them. 12 And I saw the dead, great and small, standing before the throne, and books were opened. Ingredients:


1/4 cup olive oil
2 tsp salt
2 tsp curry powder
2 cups fresh chopped green beans
2 cups chopped zucchini
2 large carrots peeled and shaved
1/4 cup cilantro leaves


Directions:


1. fry the green beans, salt, and curry powder in the oil on medium heat for ~ 3 minutes, cover lid and cook for ~ 10 minutes (open lid, stir, and close lid a few times during the 10 minutes)
2. add the remaining ingredients, cover lid, and continue cooking for ~ 3 minutes
3. garnish with cilantro

Lime Mango Orange Jicama Salad

Ingredients:

juice from 1 lime
2 cups chopped mango
2 cups chopped jicama



3 oranges peeled and sliced

Directions:

Toss all ingredients

Minced Meat and Cabbage Stir-fry




 8 But about the Son he says,
   “Your throne, O God, will last for ever and ever,
   and righteousness will be the scepter of your kingdom.
9 You have loved righteousness and hated wickedness;
   therefore God, your God, has set you above your companions
   by anointing you with the oil of joy.” Heb 1

Ingredients:

1/4 cup olive oil
1 onion diced
2 lb raw lean ground beef or turkey
1 tbsp salt
1 head cabbage chopped 
1/2 cup bell pepper diced

Directions:

1. fry the onions in the oil for ~ 5 minutes on medium heat
2. add the meat and salt and continue frying while stirring until the meat is brown (~5-7 minutes)
3. cover lid and cook for ~ 10 minutes
4. add the remaining ingredients and fry while stirring for ~ 3 minutes
5. cover lid and cook for another 5 minutes

Asian Indian Shrimp and Vegetable Noodles





1 In the past God spoke to our forefathers through the prophets at many times and in various ways, 2 but in these last days he has spoken to us by his Son, whom he appointed heir of all things, and through whom he made the universe. 3The Son is the radiance of God’s glory and the exact representation of his being, sustaining all things by his powerful word. Ingredients:


3 tbsp sesame oil
1 onion diced
2 cloves garlic minced
2 tbsp soy sauce
1/4 cup crushed peanuts
1 cup fresh broccoli
1 cup baby carrots chopped
1/2 cup diced bell peppers
2 tbsp small hot peppers sliced
3 eggs scrambled separately
1 lb raw shrimp (I used frozen de-veined and tail-off)
1 lb dry whole wheat noodles
2 quarts water
2 tsp salt

Directions:

1. boil the noodles in the water and salt until al dente (~ 8-10 minutes)
2. fry the onions and garlic in the oil for ~ 5 minutes on medium heat
3. add the soy sauce and shrimp, continue frying for ~ 3 minutes, cover lid and let simmer for ~ 10 minutes
4. add the remaining ingredients, cover lid, and keep cooking for ~ 5 minutes.
5. add the shrimp and vegetables to the noodles and mix

Persimmon Walnut Scones



24 “‘For I will take you out of the nations; I will gather you from all the countries and bring you back into your own land. 25 I will sprinkle clean water on you, and you will be clean; I will cleanse you from all your impurities and from all your idols. 26 I will give you a new heart and put a new spirit in you; I will remove from you your heart of stone and give you a heart of flesh. 27 And I will put my Spirit in you and move you to follow my decrees and be careful to keep my laws. Ingredients:

1 egg
3/4 cup honey
3 oz butter softened (3/4 stick)
2 small ripe persimmon diced
2 cups whole wheat flour
2 tsp baking soda
1/4 tsp salt
1/3 cup chopped walnuts

Directions:

1. use an egg beater to beat together the egg, honey, butter, and persimmon
2. beat in the other ingredients
3. drop by heaping tbspfuls onto a baking tray
4. bake for ~ 25 minutes @ 350 degrees F

Dad's Indian Chicken (for Anand and Prassu)


25 At that [cj]time Jesus said, “I praise You, Father, Lord of heaven and earth, that You have hidden these things from the wise and intelligent and have revealed them to infants. 26 Yes, Father, for this way was well-pleasing in Your sight. 27 All things have been handed over to Me by My Father; and no one knows the Son except the Father; nor does anyone know the Father except the Son, and anyone to whom the Son wills to reveal Him. Matt 11

Ingredients:

1/3 cup olive oil
2 red onions diced
7 cloves garlic minced
1 inch ginger root crushed
(or instead of above ingredients use 1/4 cup ginger-garlic paste that Anand has)
2 lbs fryer chicked cut into pieces
2 tsp salt
1 tsp turmeric
2 tsp chili powder
1 tbsp crushed red chili pepper
1/4 cup chopped cilantro
3 roma tomatoes diced

Directions:

1. on medium-high heat fry the onions in the oil until the onions are starting to get burned
2. add the ginger and garlic and fry until these two are almost burned as well
3. add the chicken, salt, and turmeric and fry until the outside of the chicken is almost burned
4. add the remaining ingredients, bring to a boil, cover lid


5. cook on medium heat for ~ 15 minutes

Fragrant Chicken and Brown Rice Quinoa Potluck Dish

Ingredients:

Chicken

1/4 cup olive oil
4 cloves garlic minced
1 large onion diced
2 lb raw fresh chicken
1 tbsp salt
2 tsp curry powder
1 tsp white pepper
juice from 1/2 lime
2 zucchini diced
1 carrot peeled and diced
1 bell pepper diced

Rice and Quinoa

2 cups dry brown rice
1/2 cup dry quinoa
2 tsp salt
4 tbsp butter (1/2 stick)
7 cups water

cilantro and dried cranberries for garnish 

Directions:

1. fry the onions, garlic, salt, curry powder, and white pepper in the olive oil fo r~ 5 minutes under medium-high heat
2. add the chicken and continue frying while stirring for ~ 5 minutes
3. cover lid and reduce heat to medium; simmer for ~ 15 minutes
4. all the zucchini, carrots, and peppers
5. meanwhile bring the rice/quinoa ingredients to a boil in another pot, reduce heat to low and let simmer for ~ 1 hr
6. in a casserole dish pour the rice onto one side on the dish
7. pour the chicken mixture onto the other side of the dish
8. bake for ~ 20 minutes before serving 

garnish with cilantro and dried cranberries

juice from 1 lemon
2 tsp salt
2 heads cabbage chopped
1 carrot grated
1 asian pear diced
2 kiwi peeled and diced
2 cups grapes halved
1/2 cup shredded/cut cheese
1/4 cup flaxseed

Potato Beef Croquettes

Ingredients:


2 eggs
1 cup cooked lean ground beef
2 cups mashed cooked potato (peeled)
2 tsp salt
3 green chillis sliced
3 red chillis sliced
1 tsp pepper
3 cloves garlic minced
2 tbsp minced fresh ginger root
1 carrot diced

Directions:

1. mix all the ingredients
2. form into balls/burgers and place onto an olive oil-sprayed foil-lined tray


3. bake for ~30 minutes @ 350 degrees F

Braised Tilapia





7 “My father David had it in his heart to build a temple for the Name of the LORD, the God of Israel. 8 But the LORD said to my father David, ‘Because it was in your heart to build a temple for my Name, you did well to have this in your heart. 9 Nevertheless, you are not the one to build the temple, but your son, who is your own flesh and blood—he is the one who will build the temple for my Name.’2 Chron 6


Ingredients:


2 tbsp sesame oil
1 onion diced
3 cloves garlic minced
2 tsp salt


1 lb fresh tilapia

Directions:

1. fry the onions, garlic, and salt in the oil for ~ 5 minutes under medium-high heat
2. add the tilapia, cover lid, reduce heat to medium and cook for ~ 10 minutes or until the bottom of the fish is starting to sear





Carrots, Cabbage, and Sunflower Seeds Brown Rice and Red Quinoa



 “O LORD, God of Israel, there is no God like you in heaven or on earth—you who keep your covenant of love with your servants who continue wholeheartedly in your way. 15 You have kept your promise to your servant David my father; with your mouth you have promised and with your hand you have fulfilled it—as it is today.
 16 “Now LORD, God of Israel, keep for your servant David my father the promises you made to him when you said, ‘You shall never fail to have a man to sit before me on the throne of Israel, if only your sons are careful in all they do to walk before me according to my law, as you have done.’ 17 And now, O LORD, God of Israel, let your word that you promised your servant David come true.2 Chron 6

Ingredients:

1 tbsp olive oil
1 onion slices
2 carrots peeled and diced
1/3 head cabbage chopped
1/4 cup sunflower seeds
2 tsp salt
2 cups cooked brown rice
1 cup cooked red quinoa

Directions:

1. fry the onion, carrots, cabbage, seeds, and salt in the oil for ~ 5 minutes under medium-high heat
2. add the rice and quinoa and continue cooking while stirring for ~ 10 minutes

Chilli Pepper Garlic Biscuit Slices






 1 Now we know that if the earthly tent we live in is destroyed, we have a building from God, an eternal house in heaven, not built by human hands. 2 Meanwhile we groan, longing to be clothed with our heavenly dwelling, 3 because when we are clothed, we will not be found naked. 4 For while we are in this tent, we groan and are burdened, because we do not wish to be unclothed but to be clothed with our heavenly dwelling, so that what is mortal may be swallowed up by life. 5 Now it is God who has made us for this very purpose and has given us the Spirit as a deposit, guaranteeing what is to come.
 6 Therefore we are always confident and know that as long as we are at home in the body we are away from the Lord. 7 We live by faith, not by sight. 8 We are confident, I say, and would prefer to be away from the body and at home with the Lord. 9 So we make it our goal to please him, whether we are at home in the body or away from it. 10 For we must all appear before the judgment seat of Christ, that each one may receive what is due him for the things done while in the body, whether good or bad.2 Cor 5

Ingredients:

2 eggs
1/3 cup olive oil
1/3 cup milk
1/4 cup flax seeds
2 tsp baking soda
1 tsp salt
2 cloves garlic minced
1 jalapeno pepper minced
3 red chilli peppers minced
2 cups whole wheat flour

Directions:

1. mix the eggs, oil, and milk
2. stir in the rest of the ingredients
3. pour onto an olive oil-sprayed foil-lined tray
4. bake for ~ 35 minutes at 350 degrees F

Rosemary Beef, Zucchini, and Carrots




1 Are we beginning to commend ourselves again? Or do we need, like some people, letters of recommendation to you or from you? 2 You yourselves are our letter, written on our hearts, known and read by everybody. 3 You show that you are a letter from Christ, the result of our ministry, written not with ink but with the Spirit of the living God, not on tablets of stone but on tablets of human hearts.
 4 Such confidence as this is ours through Christ before God. 5 Not that we are competent in ourselves to claim anything for ourselves, but our competence comes from God. 6 He has made us competent as ministers of a new covenant—not of the letter but of the Spirit; for the letter kills, but the Spirit gives life.2 Cor 3

Ingredients:

2 tbsp olive oil
1 onion diced
3 cloves garlic minced
2 tsp salt
1 tsp black pepper
1 lb raw beef (sirloin tip steak) cut into small pieces
1 medium zucchini cut into pieces
3 carrots peeled and diced
2 medium green tomatoes diced
1 tbsp chopped fresh rosemary



Directions:

1. fry the onion, garlic, salt, and pepper in the oil for ~ 5 minutes under medium-high heat
2. add the beef and continue cooking until beef is brown


3. add the rest of the ingredients, cover lid, and continue cooking for ~ 10 minutes under medium-high heat

Spicy Tamarind Catfish Curry

1 “But now listen, O Jacob, my servant,
   Israel, whom I have chosen.

Ingredients:
2 tbsp olive oil
1 onion diced
1 tbsp minced garlic
1 tbsp minced ginger
2 tsp turmeric
1 tbsp salt
12 oz catfish cut into pieces (raw or thawed)


1 tbsp tamarind paste
1/2 cup water
1/4 cup chopped cilantro
1 tomato diced
2 banana peppers diced
2 jalapeno peppers diced

Directions:
1. fry the onion, garlic, ginger, turmeric, and salt in the oil until the onions are translucent (~ 5 minutes)



2. add the rest of the ingredients and bring to a boil while stirring


3. cover lid and let simmer for ~15 minutes under medium heat

Homemade Tomato Bone Stock




9 Help us, O God our Savior,
   for the glory of your name;
deliver us and forgive our sins
   for your name’s sake.

   that you avenge the outpoured blood of your servants.
11 May the groans of the prisoners come before you;
   by the strength of your arm
   preserve those condemned to die.

   the reproach they have hurled at you, O Lord.
13 Then we your people, the sheep of your pasture,
   will praise you forever;
from generation to generation
   we will recount your praise.Ps 79

Ingredients:
1 quart of bones (I used bones from lamb; you can use bones from chicken, beef, fish, goat, etc.)
4 roma tomatoes
1 onion
1 tbsp salt
1 quart water


Directions:
1. in the blender, puree the tomatoes and onion (adding some of the water if necessary)
2. add all ingredients into a pressure cooker and cook for ~30 minutes (~20 whistles)




3. strain 




By God's design this stock is very healthy for you: Many nutrients from the bone ("extracellular matrix components" and minerals) are released into the stock when whole bones are used. Anti-inflammatory compounds are present in bone soup as well contributing to its use for the treatment of various illnesses (e.g. common cold). You can eat this plain or add to other richer soups.

Mediterrasian Salmon with Garlic, Ginger, Peppers, and Olives





 4 “What can I do with you, Ephraim?
   What can I do with you, Judah?
Your love is like the morning mist,
   like the early dew that disappears.
5 Therefore I cut you in pieces with my prophets,
   I killed you with the words of my mouth;
   my judgments flashed like lightning upon you.
6 For I desire mercy, not sacrifice,
   and acknowledgment of God rather than burnt offerings. Hosea 6



Ingredients:


Mediterrasian Sauce:
1/4 cup water
1 banana pepper chopped
2 jalapeno peppers chopped
3 cloves garlic
1 inch ginger root
1/2 cup olives
1 tbsp olive oil
1 tbsp salt

1 tsp black pepper
1 cup diced tomatoes
1/4 cup fresh basil leaves
24 oz salmon pieces (I used frozen and thawed under hot tap water individually wrapped salmon)


Directions:
1. in the blender puree the sauce ingredients


2. spread 1/3 of sauce on the bottom of an olive oil-sprayed foil-lined tray
3. lay the salmon pieces down onto sauce in the pan with the silver side down
4. sprinkle the top of the salmon with the black pepper


5. stir the tomatoes and basil into the remaining 2/3 of the sauce and pour over salmon


6. bake uncovered for ~ 30-40 minutes at 400 degrees F or until liquid is mostly gone

Baked Eggplant with Peanuts, Peppers, Onions, and Lime





 1 “Come, let us return to the LORD.
He has torn us to pieces
   but he will heal us;
he has injured us
   but he will bind up our wounds.
2 After two days he will revive us;
   on the third day he will restore us,
   that we may live in his presence.
3 Let us acknowledge the LORD;
   let us press on to acknowledge him.

Ingredients:
2 lbs baby eggplants quartered




2 tbsp olive oil
1 onion diced
1 jalapeno pepper minced
1 banana pepper minced
1/2 cup crushed peanuts (with skins)
2 tsp salt
juice from 1/2 lime



Directions:
1. combine and toss all ingredients


2. spread on foil-lined tray and bake for ~ 45-60 minutes tossing every 20 minutes at 350 degrees F

Chocolate Sweet Potato Bars with Molasses Oat Crust





17 “Behold, I will create 
   new heavens and a new earth. 
The former things will not be remembered, 
   nor will they come to mind.

for I will create Jerusalem to be a delight 
   and its people a joy.

he who dies at a hundred

Ingredients:


Crust:
2 eggs
1 cup honey
1/4 cup molasses
1.5 cup whole wheat flour
1.5 cups oats
1/4 tsp salt
1 tsp baking soda


Chocolate Layer:
1 egg
2 oz butter (1/2 stick)
2 cups mashed sweet potato (I used Louisiana sweet potatoes which are yellow)




1 cup honey
1/2 cup cocoa powder


Directions:


1. for the crust, mix the egg, honey, and molasses
2. stir in the flour, oats, baking soda, and salt
3. spread crust batter onto an olive oil-sprayed foil-lined pan




4. mix together the chocolate layer ingredients and pour on top of the crust batter


 and spread level with a spoon
5. bake for ~30-40 minutes at 350 degrees F
