1 quart of bones (I used bones from lamb; you can use bones from chicken, beef, fish, goat, etc.)
4 roma tomatoes
1 onion
1 tbsp salt
1 quart water
Directions:
1. in the blender, puree the tomatoes and onion (adding some of the water if necessary)
2. add all ingredients into a pressure cooker and cook for ~30 minutes (~20 whistles)
3. strain
By God's design this stock is very healthy for you: Many nutrients from the bone ("extracellular matrix components" and minerals) are released into the stock when whole bones are used. Anti-inflammatory compounds are present in bone soup as well contributing to its use for the treatment of various illnesses (e.g. common cold). You can eat this plain or add to other richer soups.

ReplyDeleteThank you for the comment and blessings to you! I thought that this soup was tasty. Often stocks are added to other types of soup (e.g. wild rice soup, chicken noodle soup) to contribute to a richer flavor. Studies show that about 12 exposures to a health food increase perceived good taste on an individual. For example people may struggle when switching from white flour to whole wheat flour, but after the period of adjustment, whole grains are easily described as preferable to refined grains. God created food for us with great wisdom and care, incorporating all of the nutrients for our nourishment, growth, and enjoyment to the praise of His glory and the thanking of His Name!
