Chicken, Brown Rice, and Garbanzo Bean Soup



There will be silence before You, and praise in Zion, O God,
And to You the vow will be performed.
O You who hear prayer,
To You all men come.

How blessed is the one whom You choose and bring nearto You
To dwell in Your courts.

Ingredients:

2 tbsp butter
1 cup chopped cherry tomatoes
1/4 cup fresh chopped basil (or other herbs of your choice)
1 tsp salt (add additional tsp if garbanzo beans are unsalted)
1 tsp garlic powder
2 cups diced cooked chicken
2 cups garbanzo beans cooked and pureed in 1 cup water (use a blender)
1 cup cooked brown rice

Directions:

1. add the butter, tomatoes, basil, salt, and garlic powder to a large cooking pot and fry on medium heat for ~ 3 minutes
2. add the chicken and continue frying for ~ 3 minutes
3. add the pureed beans and rice, bring to a boil, cover lid, and let simmer on low heat for ~ 15 minutes

Italian Noodles with Sardines and Kidney Beans




We have thought on Your lovingkindness, O God,

Ingredients:

2 cups cooked whole wheat noodles
2 cups milk
1 tsp salt
1 cup shredded mozzarella cheese
1 cup stewed tomatoes
12 oz cooked sardines
1/2 cup fresh basil leaves
3 cloves minced garlic
1 cup cooked kidney beans

Directions:

1. bring the noodles,milk, and salt to a boil in a medium-sized pot on medium-high heat
2. add the remaining ingredients and simmer on low heat for ~ 10 minutes covered; stir occasionally

Chicken Wild Rice Garbanzo Bean Casserole




Lorddo not rebuke me in Your anger,

Ingredients:

1 cup wild rice cooked in 4 cups chicken broth
8 oz chicken cooked and cubed
1 cup cooked garbanzo beans

1/2 cup butter (1 stick)
2 large carrots peeled and diced
1 onion diced
3 cloves garlic minced
2 apples diced (I used pink lady apples)
2 tsp salt
1/4 cup fresh rosemary leaves

1/3 cup white whole wheat flour

2 cups milk

1/4 cup shredded cheese

Directions:

1. heat the butter on medium heat in a large pot
2. add carrots, onion, garlic, apples, rosemary, and salt and cook for ~ 10 minutes on medium heat while stirring
3. add flour and cook for ~ 2 minutes while stirring
4. add milk and bring to a boil while stirring
5. add the rice and chicken and bring to a boil
6. simmer on low heat for ~ 15 minutes
7. pour into large baking tray and sprinkle with cheese; cover with aluminum foil
8. bake for ~ 15 minutes at 350 degrees F (optional; if prepared ahead of time)

Ingredients:

1/4 cup olive oil 
3 cloves garlic minced
2 tsp salt
2 cups quartered brussel sprouts
2 cups halved cherry/grape tomatoes
2 cups fresh spinach leaves
1/2 cup diced bell pepper
1 cup slivered baby carrots
1/2 cup fresh basil leaves
2 cups cooked garbanzo beans

Directions:

1. heat the oil in a pan on medium heat
2. add garlic and salt to pan and fry for ~ 3 minutes
3. add the brussel sprouts and continue frying for ~ 3 minutes
4. add the tomatoes and continue frying for ~ 3 minutes
5. add the spinach leaves and cover lid; leave for 3 minutes
6. open lid and stir
7. add the peppers, carrots, and basil and continue cooking covered for ~ 5 minutes
8. optionally stir in garbanzo beans

Serve over whole wheat noodles or brown rice with shaved cheese and/or grilled chicken pieces as a topping

Spicy Kidney Bean Carrot Spinach Tomato Soup




6 To the roots of the mountains I sank down;

Ingredients:

1/4 cup olive oil
1 tsp cumin seeds
3 cloves garlic minced
1 tbsp salt
1 onion diced
1 cup chopped fresh spinach
5 tomatoes diced
2 carrots peeled and diced
1/2 cup cilantro leaves
5 small red chillis minced
2 tsp soy sauce
1 tsp black pepper
1 cup water
2 cups cooked kidney beans
1 cup cooked small red beans

Directions:

1. fry the cumin, garlic, salt, and onions in the oil under medium heat for ~ 5 minutes
2. add the spinach, tomatoes, carrots, and cilantro and continue frying while stirring for ~ 5 minutes
3. add the chillis, soy sauce, black pepper, and water
4. cover lid and let simmer for ~ 15 minutes
5. add the beans and continue simmering for ~ 5 minutes

Ingredients:
1/2 cup molasses
1 cup pureed dates (put dates in the blender)
7 Mozzarella cheese sticks powdered in the blender/food processor
1 tsp vanilla
6 eggs
2 cups pureed kidney beans
1/2 cup cocoa powder
1/2 tsp salt
2 tsp baking soda
1 whole wheat flour

Directions:
1. mix molasses, dates, vanilla, eggs, and beans
2. stir in salt, baking soda, and flour
3. spread on large olive oil-sprayed foil-lined cake pan
4. bake for ~ 40 minutes at 350 degrees F

Italian Pole Beans, Zucchini, Tomatoes, Peppers, and Onion




 4 Jesus answered: “Watch out that no one deceives you. 5 For many will come in my name, claiming, ‘I am the Christ,’ and will deceive many. 6 You will hear of wars and rumors of wars, but see to it that you are not alarmed. Such things must happen, but the end is still to come. 7 Nation will rise against nation, and kingdom against kingdom. There will be famines and earthquakes in various places. 8 All these are the beginning of birth pains.
   9 “Then you will be handed over to be persecuted and put to death, and you will be hated by all nations because of me.10 At that time many will turn away from the faith and will betray and hate each other, 11 and many false prophets will appear and deceive many people. 12 Because of the increase of wickedness, the love of most will grow cold, 13 but he who stands firm to the end will be saved. 14 And this gospel of the kingdom will be preached in the whole world as a testimony to all nations, and then the end will come.
Matthew 24

Ingredients:
2 tbsp olive oil
1 onion diced
1 tsp salt
4 roma tomatoes diced
1/4 cup water
1 cup Italian pole beans chopped
1 yellow zucchini diced
1 green zucchini diced
1 banana pepper diced
1 jalapeno pepper minced




Directions:
1. fry the onions and salt in the oil under medium high heat for ~ 5 minutes
2. add the beans, tomatoes, and water and bring to a boil
3. cover lid and let boil for ~ 5 minutes
4. add Zucchini and peppers and cover lid
5. reduce heat to medium low and simmer for ~ 5 minutes

Chocolate Cheesecake with Walnut Crust




 3 Then the LORD asked me, “What do you see, Jeremiah?”
   “Figs,” I answered. “The good ones are very good, but the poor ones are so bad they cannot be eaten.”
 4 Then the word of the LORD came to me: 5 “This is what the LORD, the God of Israel, says: ‘Like these good figs, I regard as good the exiles from Judah, whom I sent away from this place to the land of the Babylonians.6 My eyes will watch over them for their good, and I will bring them back to this land. Ingredients:
Crust
1 egg
1/3 cup honey
1/2 cup walnut flour (walnut powdered in the blender)
1/2 tsp salt
1/2 tsp baking soda
1/2 cup whole wheat flour

Cheesecake 
3 eggs
2 cups pureed cooked kidney beans (you can hardly tell in the end)
1/2 dates (ground in the blender/food processor)
1/2 cup honey
1/2 cup cocoa powder


Directions:
1. mix crust ingredients and spread onto the bottom of an olive oil-sprayed foil-lined cake pan




2. beat cheesecake ingredients together and pour onto crust





3 bake for ~ 1 hr at 350 degrees F

Fresh Basil Vegetable Mozzarella Salad




6 Seek the LORD while he may be found;
   call on him while he is near.

Ingredients:
2 tbsp olive oil
1 lb fresh green beans chopped (yellow and/or green)
1 large red bell pepper diced




2 zucchinis (yellow and/or green)




handful of basil leaves
2 cups cooked garbanzo beans (16 oz can)
2 tsp salt
juice from 1/2 lemon or lime
8 oz fresh mozzarella cheese






Directions:
1. stir fry the green beans, peppers, zucchinis, basil leaves, and salt in the olive oil fro ~ 5 minutes under medium high heat




2. cover lid and continue cooking for ~3 minutes
3. stir in lemon juice and garbanzo beans




4. pour into serving dish
5. arrange mozzarella and more basil leaves on top

Garbanzo Bean Curry (Chole)

12 Therefore, brothers, we have an obligation—but it is not to the sinful nature, to live according to it. 13For if you live according to the sinful nature, you will die; but if by the Spirit you put to death the misdeeds of the body, you will live, 14 because those who are led by the Spirit of God are sons of God. Romans 8




Ingredients:
2 tbsp olive oil
1 onion diced
1 tsp minced garlic
1 tsp minced ginger
2 cups cooked garbanzo beans (e.g. canned without preservatives)
1 cup crushed tomatoes (fresh pureed or canned)
2 sliced jalapenos
1/2 cup water
1/4 cup chopped cilantro
2 tsp salt
1 tsp turmeric
2 tsp chosen ground spices (cloves, saffron, cardamom, cumin, lemon, chole powder, curry powder, cardamom, garam masala, etc.)
1 tbsp lemon juice (optional)
cilantro leaves for garnish

Directions:
1. fry the onions, salt, turmeric, ginger, and garlic in the oil on high heat until onions are translucent
2. add the beans, cilantro, and spices and fry for 3 minutes
3. add the tomato, jalapenos, and water and bring to a boil
4. reduce heat to medium low and simmer for 15-20 minutes
5. add lemon juice and pour into serving dish
6. add cilantro garnish

Beautiful French Green Beans, Cauliflower, and Red Peppers



12 Therefore, since we have such hope, we use great boldness of speech— 13 unlike Moses, who put a veil over his face so that the children of Israel could not look steadily at the end of what was passing away. 14 But their minds were blinded. Ingredients:
1 tbsp olive oil
1 large red bell pepper diced
1 cauliflower chopped
1 package of frozen French green beans chopped (I used Trader Joe's thawed and chopped)
1 tsp salt
1/4 cup water)


Directions:
1. coat the bottom of a frying pan with olive oil
2. stir-fry the peppers and salt in the oil for 3 minutes
3. add the cauliflower and green beans and fry until the vegetables start to stick to the bottom of the pan (~2 minutes)
4. add the water, cover lid and leave under medium heat for ~5 minutes
5. open lid and stir

Honey Soybean Yogurt





Ingredients:
1.5 cups raw soybeans (soaked overnight in 4.5 cups of water and boiled in a pressure cooker)
1 cup honey
1/4 tsp salt
12 Calcium Supplements (powdered, 300mg each if being used as a dairy substitute, optional)
1 tbsp plain yogurt (for culture)

Directions:
1. puree the freshly boiled soybeans in a blender or food processor; cool down to slightly above room temperature
2. stir in the honey, calcium, salt, and yogurt
3. pour into a container with lid and cover the lid
4. leave at room temperature for 6-8 hrs (overnight)

* if you add the calcium tablets with the soybeans when boiling, they will dissolve and you need not powder them.

Roasted Rosemary Fingerlings and Garbanzo Beans

I will love You, O LORD, my strength. The LORD is my rock and my fortress and my deliverer; My God, my strength, in whom I will trust; My shield and the horn of my salvation, my stronghold. I will call upon the LORD, who is worthy to be praised; So shall I be saved from my enemies.

For You will light my lamp; The LORD my God will enlighten my darkness.You have also given me the shield of Your salvation; Your right hand has held me up, Your gentleness has made me great.



Ingredients:
7 Fingerling Potatoes (washed and diced)
1 12 oz can of garbanzo beans (no preservatives)
1 tsp dried rosemary
1/2 tsp salt
2 tsp olive oil


Directions:
1. Combine all ingredients
2. spread out in shallow pan and bake for 25 minutes at 350 degrees F

Monday

Chocolate Pudding





Ingredients:
2 cups raw kidney or black beans
1 tsp salt
2 cups dried dates
1/2 cup cocoa powder

Directions:
1. soak raw beans, salt, and dates in 6 cups of water overnight
2. boil in pressure cooker until beans are cooked (~ 4 whistles in our cooker), leave to cool
3. using a hand blender blend the bean/date mixture to an even consistency
4. stir in the cocoa powder
