Chicken Wild Rice Garbanzo Bean Casserole




Lorddo not rebuke me in Your anger,

Ingredients:

1 cup wild rice cooked in 4 cups chicken broth
8 oz chicken cooked and cubed
1 cup cooked garbanzo beans

1/2 cup butter (1 stick)
2 large carrots peeled and diced
1 onion diced
3 cloves garlic minced
2 apples diced (I used pink lady apples)
2 tsp salt
1/4 cup fresh rosemary leaves

1/3 cup white whole wheat flour

2 cups milk

1/4 cup shredded cheese

Directions:

1. heat the butter on medium heat in a large pot
2. add carrots, onion, garlic, apples, rosemary, and salt and cook for ~ 10 minutes on medium heat while stirring
3. add flour and cook for ~ 2 minutes while stirring
4. add milk and bring to a boil while stirring
5. add the rice and chicken and bring to a boil
6. simmer on low heat for ~ 15 minutes
7. pour into large baking tray and sprinkle with cheese; cover with aluminum foil
8. bake for ~ 15 minutes at 350 degrees F (optional; if prepared ahead of time)

Strawberry Sweet Potato Scones

Ingredients:

1 egg
1/2 cup honey
1/3 cup olive oil
mashed flesh from 1 large cooked orange sweet potato
2 tsp vanilla
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup fresh diced strawberries

Directions:

1. beat together the egg, honey, oil, sweet potato, and vanilla
2. beat in the flour, baking powder, and salt
3. stir in the strawberries and drop by tablespoonfuls on a baking tray
4. bake for ~ 25 minutes at 350 degrees F

Rosemary Scalloped Potatoes and Turkey (for potluck)

Ingredients:

7 medium potatoes sliced into 1/4" slices
3 cups cooked cubed turkey
2 oz butter cut into small pieces
1 tbsp salt
2 tsp white pepper
1 onion sliced
2 tbsp fresh rosemary leaves
1/4 cup whole wheat flour
3 cups milk

Directions:

1. stir together the first 7 ingredients
2. mix in the flour and arrange on a large baking tray
3. pour milk over the other ingredients
4. bake for ~ 2.5 hours covered at 350 degrees F (it took this long for the potatoes to cook!...but you could keep checking every 30 min)

Whole Grain Crackers and Almond-coated Cheese Ball

Ingredients:

Crackers
1/4 cup olive oil
3 egg yolks
1/3 cup water
1/2 tsp salt
1 tsp baking soda
~2.5 cups whole wheat flour

Cheeseball
5 oz Neufchatel cheese
2 tbsp grated gouda cheese
2 tbsp grated cheddar cheese
2 tbsp grated provolone cheese
1/2 tsp salt
1/4 cup chopped almonds

Directions:

1. combine yolks, oil, water, salt, and baking soda
2. knead in the flour (add more if necessary) to achieve a soft rollable dough
3. use a rolling pin to roll pieces of dough very thin (~ 1/8")
4. use a pizza cutter to cut squares and arrange on a baking tray
5. bake for 12-15 minutes @ 350 degrees F
6. combine cheeses and salt and put onto a sheet of plastic wrap
7. use the plastic wrap to form the cheese into a ball
8. remove wrap and roll the ball in chopped almonds
9. arrange crackers and ball on a tray

Angel Cinnamon Cream Rolls





 1 In the year that King Uzziah died, I saw the Lord seated on a throne, high and exalted, and the train of his robe filled the temple. 2 Above him were seraphs, each with six wings: With two wings they covered their faces, with two they covered their feet, and with two they were flying. 3 And they were calling to one another:

Ingredients:

Cake
3 egg white beaten until stiff peaks form
1/3 cup whole wheat flour
1/3 cup evaporated cane juice
1/4 tsp salt
1/2 tsp baking soda
1 tsp vanilla

Cinnamon Cream
2 tbsp Neufchatel cheese softened
2 tbsp evaporated cane juice
1 tsp cinnamon

Directions:
1. combine cake ingredients and spread onto a buttter-sprayed foil-lined tray
2. bake for ~ 15 min at 350 degrees F
3. roll up like a scroll with the foil still attached and unroll
4. use a thin spatula to remove the cake from the foil and let cool
5. combine cream ingredients and spread over cake
6. roll up like a scroll and slice

Potato and Cheese Souffle Soup

Ingredients:

2 tbsp butter
1 cup diced broccoli
3 carrots peeled and diced
3 cloves garlic minced
1 tbsp salt
1 tsp curry powder
1 tsp white pepper

3/4 cup whole wheat flour
2 cups chicken broth
1 cup shredded mozzarella cheese
4 cups milk
4 cups potatoes cooked and diced
4 eggs

Directions:

1. fry the broccoli, carrot, garlic, salt, pepper, and curry powder in the butter for ~ 5 minutes under medium-high heat
2. add the flour and continue cooking while stirring for ~ 3 minutes
3. add the rest of the ingredients and bring to a boil
4. cover lid, reduce heat to low, and simmer for ~ 15 minutes

Potato Beef Croquettes

Ingredients:


2 eggs
1 cup cooked lean ground beef
2 cups mashed cooked potato (peeled)
2 tsp salt
3 green chillis sliced
3 red chillis sliced
1 tsp pepper
3 cloves garlic minced
2 tbsp minced fresh ginger root
1 carrot diced

Directions:

1. mix all the ingredients
2. form into balls/burgers and place onto an olive oil-sprayed foil-lined tray


3. bake for ~30 minutes @ 350 degrees F

Wild Rice Acorn Squash Turkey Soup





 19 This day I call heaven and earth as witnesses against you that I have set before you life and death, blessings and curses. For the LORD is your life, and he will give you many years in the land he swore to give to your fathers, Abraham, Isaac and Jacob. Deut 30


Ingredients:


1 cup raw wild rice cooked in 4 cups of salted chicken broth (I used Trader Joe's)
12 oz raw ground turkey
2 tsp salt
1 tsp white pepper
1 tsp curry powder
1 onion diced
3 cloves garlic minced
1/2 bell pepper diced
10 baby carrots diced
5 red radishes diced
1 apple diced (I used Golden Delicious)



flesh mashed from 1 Acorn squash (microwave for ~ 15 minutes, cut in half, let cool, scoop out seeds with a spoon, scoop out flesh)


1/2 cup half and half
3 cups milk
1/4 cup white whole wheat flour

Directions:

1. brown the turkey, salt, pepper, and curry powder


2. add the vegetables (except squash) and apples and cook for ~ 10 minutes while stirring


3. stir in the squash, half and half, milk, and flour and bring to a boil
4. add the rice and bring to a boil






Baby Red Potato and Minced Meat Stir-Fry




15 See, I set before you today life and prosperity, death and destruction. 16 For I command you today to love the LORD your God, to walk in his ways, and to keep his commands, decrees and laws; then you will live and increase, and the LORD your God will bless you in the land you are entering to possess.
 17 But if your heart turns away and you are not obedient, and if you are drawn away to bow down to other gods and worship them, 18 I declare to you this day that you will certainly be destroyed. You will not live long in the land you are crossing the Jordan to enter and possess. Deut 30

Ingredients:

2 lb minced raw meat (I used ground turkey)
1/2 bell pepper diced
1 onion diced
3 cloves garlic minced
1 tbsp salt
1 tsp white pepper
2 jalapeno peppers minced
2 cups cubes cooked baby red potatoes 

Directions:

1. fry the meat, peppers (both types), onion, garlic cloves, salt, and white pepper under medium-high heat until the meat is cooked (~ 10 minutes)
2. add the potatoes, stir, and cover lid for ~ 5 minutes


Apple Pie





 11 Now what I am commanding you today is not too difficult for you or beyond your reach. 12 It is not up in heaven, so that you have to ask, “Who will ascend into heaven to get it and proclaim it to us so we may obey it?” 13 Nor is it beyond the sea, so that you have to ask, “Who will cross the sea to get it and proclaim it to us so we may obey it?” 14 No, the word is very near you; it is in your mouth and in your heart so you may obey it. Deut 30


Ingredients:


Crust
1/4 cup water
1/4 cup butter cut into small pieces
1/4 cup honey
1 tsp salt
~ 2 cups whole wheat flour


Apple Filling
5 medium apples diced




1 tsp cinnamon
1/4 cup honey
juice from 1/2 lemon


Directions:
1. knead together crust ingredients
2. boil apple filling ingredients for ~ 5 minutes on medium-high heat
3. make a ball of dough (~ 2 inch diameter) and roll with a rolling pin into a large circle that will cover the bottom and sides of your pie pan
4. place circle in pie pan and smooth the sides against the pan
5. pour apple mixtures to fill the pie pan


6. make another dough circle and cover apples which sealing the edges with the inner dough circle


7. repeat with remaining ingredients to make 1 or 2 more pies
8. bake for ~ 30-40 minutes at 350 degrees F



Cinnamon Biscuits





 1 When all these blessings and curses I have set before you come upon you and you take them to heart wherever the LORD your God disperses you among the nations, 2 and when you and your children return to the LORD your God and obey him with all your heart and with all your soul according to everything I command you today, 3 then the LORD your God will restore your fortunes and have compassion on you and gather you again from all the nations where he scattered you. 4 Even if you have been banished to the most distant land under the heavens, from there the LORD your God will gather you and bring you back. 5 He will bring you to the land that belonged to your fathers, and you will take possession of it. He will make you more prosperous and numerous than your fathers. Deut 30

1 egg
1/2 cup honey
1/2 cup half and half
1/4 cup apple juice
1 tsp vanilla
2 cups whole wheat flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon

Directions:

1. mix egg, honey, half and half, apple juice, and vanilla
2. stir in the rest of the ingredients
3. drop in heaping tablespoons onto an olive oil-sprayed foil-lined tray
4. bake for ~ 30 minutes at 350 degrees F

Cinnamon Apple Oat Flaxseed Cake




 6 Moses and Aaron went from the assembly to the entrance to the Tent of Meeting and fell facedown, and the glory of the LORD appeared to them. 7 The LORD said to Moses, 8 “Take the staff, and you and your brother Aaron gather the assembly together. Speak to that rock before their eyes and it will pour out its water. You will bring water out of the rock for the community so they and their livestock can drink.”
 9 So Moses took the staff from the LORD’s presence, just as he commanded him. 10 He and Aaron gathered the assembly together in front of the rock and Moses said to them, “Listen, you rebels, must we bring you water out of this rock?” 11 Then Moses raised his arm and struck the rock twice with his staff. Water gushed out, and the community and their livestock drank.
 12 But the LORD said to Moses and Aaron, “Because you did not trust in me enough to honor me as holy in the sight of the Israelites, you will not bring this community into the land I give them.”Num 20

Ingredients:
2 eggs
1 cup honey
4 oz butter (1/2 stick)
1 tsp vanilla
2 large apples cored and diced
1 cup flax seed
1.5 cups whole wheat flour
1 cup oats
2 tsp baking soda
1/2 tsp salt


Directions:
1. mix eggs, honey, butter, and vanilla
2. stir in the rest of the ingredients
3. pour onto an olive oil-sprayed foil-lined pan
4. bake for ~ 45 minutes @ 350 degrees F

Comforting Potato Soup




 9 “I have seen these people,” the LORD said to Moses, “and they are a stiff-necked people. 10 Now leave me alone so that my anger may burn against them and that I may destroy them. Then I will make you into a great nation.”
 11 But Moses sought the favor of the LORD his God. “O LORD,” he said, “why should your anger burn against your people, whom you brought out of Egypt with great power and a mighty hand? 12 Why should the Egyptians say, ‘It was with evil intent that he brought them out, to kill them in the mountains and to wipe them off the face of the earth’? Turn from your fierce anger; relent and do not bring disaster on your people. 13 Remember your servants Abraham, Isaac and Israel, to whom you swore by your own self: ‘I will make your descendants as numerous as the stars in the sky and I will give your descendants all this land I promised them, and it will be their inheritance forever.’” 14 Then the LORD relented and did not bring on his people the disaster he had threatened.

Ingredients:


2 tbsp butter
1 red onion diced
3 cloves garlic minced
2 celery sticks diced
5 baby carrots diced
5 red radishes diced
1/4 cup diced red pepper
2 tbsp fresh rosemary






1 tsp white pepper
1 tsp curry powder
1 tbsp salt
1/2 cup white whole wheat flour


3 cups milk
2 cups broth (I used chicken)


4 oz canned fish flaked (optional; I used New Brunswick Sardines)




1/2 cup shredded Mozzarella cheese
3 cups diced cooked potatoes with skins


Directions:
1. fry the vegetables in the butter until tender (~ 5 minutes under medium-high heat)




2. add the flour, pepper, curry powder, and salt and continue frying for ~ 3 minutes




3. add the milk and broth and bring to a boil
4. add the rest of the ingredients and bring to a boil while stirring

Cinnamon Apple Walnut Oat Cream Rolls

Ingredients:

Roll
1 cup oat flour (oats powdered in the blender)
1 cup walnut flour (walnuts powdered in the blender)
1/2 cup honey
1 egg
1/2 tsp salt
1 tsp baking soda

Cream
4 oz Neufchatel cheese softened (1/2 package)
1/4 cup evaporated cane juice (or other natural sweetener)

1 extra-large apple sliced into 1/4" sliced

2 tsp cinnamon

2 tbsp crushed walnuts

Directions:
1. mix the roll ingredients and spread in a large circle on an olive oil-sprayed foil-lined tray
2. mix the cream ingredients and spread over circle
3. arrange the sliced apples over the cream
4. sprinkle with cinnamon
5. bake for ~ 30 minutes at 350 degrees F



6. roll up like a scroll (without removing the circle from the foil) and let sit until cool
7. unroll, peel the foil off, reroll, and slice
8. top with crushed walnuts

Chocolate Biscuits

Ingredients:
8 oz Neufchatel cheese softened (1 package)
2 eggs
1/2 cup evaporated cane juice
2 tsp vanilla
1 tsp salt
2 tsp baking soda
1.5 cups whole wheat flour
1/4 cup cocoa powder

Directions:
1. mix the cheese, eggs, cane juice, and vanilla
2. stir in the salt, soda, flour, and cocoa
3. drop by heaping tablespoonfuls onto an olive oil-sprayed foil-lined tray
4. bake for ~20-30 minutes at 350 degrees F

Purple Sweet Potato Pinwheels





   36 “No one knows about that day or hour, not even the angels in heaven, nor the Son, but only the Father. 37 As it was in the days of Noah, so it will be at the coming of the Son of Man. 38 For in the days before the flood, people were eating and drinking, marrying and giving in marriage, up to the day Noah entered the ark; 39 and they knew nothing about what would happen until the flood came and took them all away. Ingredients:


Dough
1/2 cup honey
1 tsp vanilla
1.5 oz butter (1/3 stick)
1 tsp baking soda
1/4 tsp salt
2 cups whole wheat flour


Filling
1/2 cup mashed purple sweet potato
4 oz Neufchatel cheese softened (1/2 package)
.5 oz butter (1/6 stick)


Directions:
1. mix the honey, vanilla, and butter
2. stir in the baking soda, salt, and flour to achieve a rollable dough (add flour/milk as necessary)
3. mix the filling ingredients
4. using a rolling pin roll the dough into (a) large rectangle(s)
5. spread filling (desired amount) on the entire surface of the rectangle of dough 
6. roll up like a scroll and slice into 1/2 inch thick slices
7. spread on a foil-lined tray and bake for ~ 15 minutes at 350 degrees F






I ended up making 3 rectangles and dividing the filling into thirds (each third for 1 rectangle), but you can adjust the size of the rectangle to adjust your preferred wheel size.
