Emily Noble gave me this idea to try making mooncakes.
Ingredients:
Dough:
2 eggs
1/3 cup honey
2 tbsp olive oil
2 tsp baking soda
~1.5 cups whole wheat flour (add more to achieve a soft rollable dough)
Filling:
mashed flesh from 2 large Oriental sweet potatoes (baked)
2 oz butter (1/2 stick)
1/4 cup evaporated cane juice
Egg Wash:
1 egg
2 tbsp honey
Directions:
1. mix the eggs, honey, and oil
2. knead in the bakind soda and flour (adding more if necessary) to achieve a soft rollable dough
3. blend together the filling ingredients (with an egg beater)
4. use a rolling pin to roll a small ball of dough into a small circle
5. put a heaping tablespoon (or so) of filling in the middle of the dough circle and fold up sides
6. take a very small ball of dough and roll out into a small circle that is large enough to cover the top of the filling; seal the sides of dough using your fingers
7. use a cup or round serving spoon (~2-3 inch diameter) as a mold: press down firmly on center of filled dough; repeat with remaining dough and filling
8. beat together egg wash ingredients and brush on top of cakes
9. bake for ~ 20 minutes at 350 degrees F
