Fresh Italian Vegetables and Fish Pasta





 1 I waited patiently for the LORD;
   he turned to me and heard my cry.
2 He lifted me out of the slimy pit,
   out of the mud and mire;
he set my feet on a rock
   and gave me a firm place to stand.
3 He put a new song in my mouth,
   a hymn of praise to our God.
Many will see and fear
   and put their trust in the LORD.

Ingredients:


Tomato Sauce
2 tbsp olive oil
1 onion diced
2 tsp salt
2 cups tomatoes diced

8 oz. uncooked whole wheat pasta
6 cups water
1 tsp salt

3 cups of diced vegetables of your choice (I used carrot, zucchini, and red peppers)
1/2 cup chopped fresh basil
1/4 cup dried cheese (I used Parmesan-Romano from Trader Joe's)
1/2 cup cooked and flaked fish (I used tuna)

Directions:
1. fry the onions and salt in the oil for ~ 5 minutes under medium-high heat,; add tomatoes and continue cooking uncovered for ~10 minutes


2. boil the pasta in the water and salt al dente; drain
3. add the vegetables, basil, and fish to the pasta


4. stir in the tomatoes


5. sprinkle with cheese
