Rasam: Indian Tomato Comfort Soup





 4 John,
   To the seven churches in the province of Asia:

Ingredients:
2 tbsp olive oil
3 cloves garlic minced
1 tsp mustard seeds
1 tsp cumin seeds
1 small onion diced
1 tsp turmeric
1 tbsp salt
4 medium-sized tomatoes pureed  (put chopped tomatoes in the blender)
water from 1/4 cup dried tamarind (put dried tamarind in a bowl with about 1/2 cup water and microwave for about 2 minutes; mash the tamarind with a fork into the water and strain; keep the water for this recipe)
1/4 cup cilantro chopped
1 jalapeno pepper diced
1 tsp cumin powder
1/2 tsp black pepper
1 tsp evaporated cane juice
5 cups water


Directions:
1. fry the garlic, mustard, and cumin in the olive oil until the mustard seeds start to "fly"
2. add the onions and continue frying until the onions are translucent
3. add the rest of the ingredients except for the water and bring to a boil
4. add the water and bring to a boil
