1 egg
1/3 cup honey
1 cup coarsely pureed dates (dates crushed in the blender)
1 tsp vanilla
2 oz butter softened (1/2 stick)
2 cups whole wheat flour
1/2 cup almond flour (almonds powdered in the blender)
1/2 tsp salt
1 tsp baking soda
1/2 cup fresh figs diced
Directions:
1. mix the egg, honey, dates, vanilla, and butter
2. stir in the flours, salt, and baking soda and knead for a few minutes
3. grab a large handful of dough and use a rolling pin to roll out into a rectangle (about 1/4 inch thick)
4. spread a spoonful of figs along the middle third of the length of the dough
5. fold the outer thirds to the center and seal (slightly overlapping the edges)
6. cut into pieces of your desired size and arrange on a baking tray
7. bake for ~ 15 minutes at 350 degrees F
