Autumn Red Quinoa Brown Rice Turkey Soup




1 God is our refuge and strength,

Ingredients:

2 tbsp butter
1 red onion diced
3 cloves garlic minced
2 apples diced
3 carrots peeled and sliced
1 tbsp salt
1 tsp white pepper
1 tsp curry powder

1/2 cup whole wheat flour
4 cups milk
1/2 cup half and half
mashed flesh from 1 cooked Acorn squash
2 cups brown rice cooked
1 cup red quinoa cooked
1 cup cooked turkey cut into pieces

Directions:

1. fry the first 8 ingredients (vegs and spices) for ~ 5 minutes under medium-high heat


2. add the flour and continue cooking while stirring for ~ 3 minutes
3. add the rest of the ingredients and bring to a boil
4. reduce heat and cover lid
5. let simmer for ~ 10 minutes
