Pumpkin Cheese Cake With Peanut Crust




 1 In you, LORD my God,

Ingredients:

Peanut Crust

2 eggs
1 cup honey
1 tsp vanilla
2 oz butter (1/2 stick)
1/3 cup natural peanut butter
2 cups whole wheat flour
1 tsp baking soda

Pumpkin Layer

2 cups mashed cooked pumpkin
1 cup honey
8 oz Neufchatel cheese (1 package)

Directions:
1. mix together the crust ingredients and spread onto the bottom of an olive oil-sprayed foil-lined tray
2. blend together the pumpkin layer ingredients and pour over crust
3. bake for ~ 45 minutes @ 350 degrees F
