Strawberry Apricot Cake





 1 Therefore, since we have been justified through faith, we have peace with God through our Lord Jesus Christ, 2 through whom we have gained access by faith into this grace in which we now stand. And we rejoice in the hope of the glory of God. 3 Not only so, but we also rejoice in our sufferings, because we know that suffering produces perseverance; 4 perseverance, character; and character, hope. 5 And hope does not disappoint us, because God has poured out his love into our hearts by the Holy Spirit, whom he has given us.
 6 You see, at just the right time, when we were still powerless, Christ died for the ungodly. 7 Very rarely will anyone die for a righteous man, though for a good man someone might possibly dare to die. 8 But God demonstrates his own love for us in this: While we were still sinners, Christ died for us. Romans 5

Ingredients:


Cake Batter
2 eggs
2 tsp vanilla
1 cup honey
3 tbsp butter softened
1/2 cup milk
1 cup whole wheat flour
1/4 tsp salt
2 tsp baking soda


Apricot Topping
5 apricots diced and mashed with a fork
2 tbsp evaporated cane juice (or other sweetener)

Strawberry Topping
2 cups diced strawberries
1/4 cup honey


Directions:
1. mix the egg, honey, butter, vanilla, and milk
2. stir in the flour, salt, and baking soda
3. bring the strawberry topping ingredients to a boil and reduce heat to medium low and continue boiling under reduced to 1/2 the origin volume
4. mix the apricot topping ingredients in a separate boil
5. pour half the cake batter in an olive oil-sprayed foil-lined cake pan
6. spread the apricot topping on top of the cake batter


7. pour the other half of the cake batter on top of the apricot topping
8. spread the strawberry topping on top of the second layer of cake batter


9. bake for ~50 minutes at 350 degrees F
