Italian Tomato and Mozzarella Pizza with Barley Crust





 1 To you I call, O LORD my Rock;
   do not turn a deaf ear to me.
For if you remain silent,
   I will be like those who have gone down to the pit.

as I lift up my hands
   toward your Most Holy Place.

Ingredients:

Crust
1/4 cup olive oil
2 tbsp honey
1 cup milk
2 tsp salt
1 tbsp yeast
3 cups whole wheat flour
1/2 cup cooked barley kernels

Topping
1 12 oz can on chopped tomatoes mixed with 1 tbsp Italian herbs (fresh or dried; if fresh then use 1/2 cup)
1 cup shredded Mozzarella cheese

Directions:
1. mix crust ingredients and knead by hand for ~ 5 minutes
2. roll the dough out into a large circle and place on an olive oil-sprayed foil-lined pizza pan and let sit for ~ 1 hr
3. spread topping ingredients over crust dough (cheese after tomatoes)
4. bake for ~ 30 min at 375 degrees F
